This isn't an exact recipe, but we love it, esp. with biscuits and smoked salmon or one of those delicious Field Roast Meats (veggie, btw) sausages! The apple and rubbed sage sausage goes well with this...
Wash, Peel and dice:
Potatoes
Carrots
Wash, chop up
two ribs celery
half a red or yellow bell pepper, small dice
You can also add in corn if you like
I cover this with a veggie stock. If you don't have homemade, I like the Imagine vegetable stock best for flavor. Add in some thyme (at least two teaspoons) a bay leaf or two, and that's it.
I am home during the day and usually cook this on high, then reduce heat when the potatoes are tender, and let it stew. I tend to stir mine every so often as well.
(you can also add in sauteed onion or a bit of garlic- I generally can't eat these foods which is why I left them out, but if you do add them in, cook them first before including them in the crock pot. You could also play with this recipe-- add a leek, less celery and more bell pepper, then use some basil in there too for a corn chowder. I love to find 'loose' recipes to play with as my palate chooses.)
We like putting a whole chicken in the slow cooker for the day. Just season the chicken...and maybe some onion...It's so trender the meaat just comes rightr off and it's quite moist...

A friend brought me a crockpot of corn chowder today as soon as the snow ended. I may never leave the house again! It basically corn, half-n-half, nutmeg,and caramelized onion.
Two super easy favorites:
Place a 1-2lb brisket in crock pot. Pour can/bottle of beer over brisket. Cover brisket with chili sauce. Cook on low 6 hours.
Place chicken in crock pot. Cover with 1 can of cream of chicken soup & 1 can of cheddar cheese soup. Cook on low 4-6 hours.
friends love ropa vieja in there, and pulled pork. Personally, I think it is good for indian food and for stews. candied yams come out good too.
