My 8-year-old daughter seems to be more interested in the healthy foods that we eat when she can contribute by helping to cook dinner. Last night, she made an easy healthy orange chicken. I cut up the chicken breast, and put it in the pan, and she seasoned it and added orange marmalade & barbecue sauce to it. She also steamed the brown rice in the microwave and steamed some asparagus spears. It was super easy but she was so proud! She even tried the asparagus! What recipes do you make with your kids?

What can I do next?

Tosca Reno has THE best cookbook for healthy recipes for kids. My kids LOVE the chicken nuggets from the cookbook.

We also made (easy) pork tenderloins 2 nights ago, which they'd never had, but RAVED to everyone how great they were:

1/2 cup olive oil and 2 cups of Ian's Italian breadcrumbs and mix together. Take the pork medallions and press them on the breadcrumb mixture and cover the entire medallion. Put them in a baking dish, cover with foil and put in the oven for 35 minutes on 425F. We paired the pork with green beans, broccoli, cauliflower, peas and onions....with sea salt, of course!

We make individual pizzas. Sometimes on Bagels or french bread, sometimes on refrigerated pizza dough.

They really like to bake, so I let them help make muffins, cornbread, zuchini and banana bread.

We make smoothies. Yhey like to put the fruit and yogurt in the blender for me.

Also, fruit and whipped cream. They like to choose the berries and wash them. They like to make it very colorful and pretty.

Not near as healthy as what you guys made, but they're still little.

you mention that she even tried the asparagus. My son loves asparagus that is dipped in egg and then rolled in panko bread crumbs and then baked at 375 for 10 minutes. He will eat them all day long. Maybe she would enjoy doing that - a bit more work and a bit messy (and fun).

Good luck,
L.

My children love my gumbo! They brag to other people about it. Full of healthy stuff:

chicken
sausage
celery
okra
diced tomatoes

I'm from Louisiana, they are not, but it's nice to know they weren't switched at birth, lol! :D God Bless :D
