Your BEST Freezer or Slow-cooker Recipes?

My in-laws are coming for a visit a few days before Christmas. I want to serve nice meals, but don't want to spend too much time cooking. I want to be able to go to museums and decorate Christmas cookies, etc...

I have a great classic meatball recipe that freezes well. Any other ideas for recipes I can freeze? I'm also open to crock pot recipes that I can make in the morning and leave all day.

Feel free to give me a link to online recipes, if it is easiest!

Oh -- anyone have a good sugar or gingerbread cookie dough recipe that I can freeze ahead of time, so all we need to do is roll, cut, bake & decorate?

When I was pregnant my mom made a few quiches and stuck them in the freezer for after my baby was born. I was skeptical about re-heating quiches, but it worked out great and they were delicious! This might be something you could do for breakfasts/brunches. One quiche recipe that I like is to put some cooked broccoli and cooked onion in the bottom of a deep dish pie shell, then a container of crumbled feta cheese. Mix 5 or 6 eggs with a few tablespoons of sour cream and salt and pepper, and then pour into the pie shell. Bake at 375 for about 45 minutes, or until firm, then cool and freeze. When you take it out of the freezer, just re-heat in a warn oven until heated through.

My husband loves this: meat- chicken or pork (pork butt works well, 1 bottle bbq sauce and 1 can crushed pineapple. Toss together in crock pot and cook how you normally cook meat. Therecipe calls for it over rice, but I think it would be could with potato salad.

I made the happy discovery that 1) Ground beef is cheapest in the 10 pound rolls and 2) a 10 pound roll fits PERFECTLY in my crock pot along with a little water, a bag of frozen chopped onion, a bag of either frozen chopped bell peppers or "seasoning mix", some garlic and salt and pepper. I break it up with my potato masher as it cooks.

Divide up into ziplocs and freeze flat. Thaws in NO TIME when dipped into hot water. And puts you WAY ahead on making Tacos, Spaghetti, Sloppy Joes, home made pizza, Maid Rites or just about any other recipe that starts out "Brown ground beef"

My other favorite is mini meat loaves-- your favorite meat loaf recipe baked in muffin tins. Freezes awesome and you can take out 1 for a quick lunch for yourself or the whole batch for dinner for a crowd!

when I make Lasagna I usually make two batches and freeze one. It freezes well

My favorite crock-pot recipe: Pizza Chili (my kids eat it cuz it tastes just like pizza)

1 lb Italian sausage
1 28oz can crushed tomatoes
1 can chili beans
1 can black beans rinsed and drained
1 can (2 1/4oz) sliced ripe olives, drained
1 med onion chopped
1 small grn pepper, chopped
2 garlic cloves, minced
1/4 cup grated Parmesan cheese
1 Tablespoon quick-cooking tapioca
1 Tablespoon dried Basil
1 Bay leaf
1 tsp salt
1/2 tsp sugar
Brown sausage and drain. Mix all ingredients well in a slow-cooker. Cook low 6-8 hours.
Serve alone or over pasta and sprinkle with Mozzarella cheese

I have a chicken pot pie recipe that is great. I have not tried it but I vet leftover turkey would be great in it also. I am kind of in a hurry right now so just pm me and tell me if you want it.

My favorite crock pot recipe:
1- large rump roast
1- can cream of mushroom soup
1- can sliced mushrooms, drained
1- envelope Lipton Onion soup mix
1/2 cup liquid- I prefer red wine but broth or water works fine too.
Mix last 4 ingredients and pour over meat in crock pot. Set on low and allow to cook all day. Meat comes out tender and it makes a wonderful gravy/sauce. You can slice the meat or shred it.

I like to add a cup of frozen peas during the last hour and I serve it over hot cooked egg noodles. Or, you can add cubed potatoes, carrots and celery mid way through the cooking if you prefer more of a stew. Super easy and everyone always loves it. I even save the leftover gravy/ sauce and use it as a soup base for another nights meal.

Look at Kraft Foods Recipe site. I always get great recipes there and they are rated by others so you know what worked or didn't.

For this one, I usually use either split chicken breasts or boneless/skinless breasts (2-3 large or 4-5 small). I also triple the rub, but I like it to have more bite! You can also mince the roasted garlic cloves and put them in mashed potatoes. This is probably one of my all time favorite meals!
