Would Love Any DIEBETIC ONLY Recipes to Prepare & Freeze

Hi Moms,
Just so it is said, I did do my research on this site for previous requests relating to mine but not a lot of findings.
Long story short..I have had some recent illness and now to say the least- I need some changes made. I need to keep it diabetic friendly I think the lingo goes. I would love to hear what favorite recipes you all have used and the ones even that my DH cannot tell it is good for him. LOL I fooled him with eggplant in lazagna once..heehee so it can be easy. =D I am not able to do as much as I used to with the increased in meds and my strength & stamina are lessened. So I am looking to still be able to "cook" for my family but cut some of the time out.
My mother and myself have planned to make these meals and freeze them over a weekend for both of out freezers. So I guess bulk meals via individual meals if that helps.
Please no website links suggestions because I have done and do ALOT of "googling" to death all on my own. Any help from any momma would be so appreciative.

I was disappointed you didn't get better response as we recently learned my husband is diabetic. The library has a lot of recipe books including slow cooker ones that would be great for freezing. So far we are trying to make sense of it all, what to eat. It sounds like you already have some wonderful ideas and great help from your mom, what a blessing.

Try savingdinner.com Leanne Ely has LOTS of helpful recipes and menus for sale. (She has some free ones, too.)
She knows her stuff, and it's very tasty. Check out her "Five for the Freezer" menus. They might be just what you are looking for.

Hi S., Here are a recipe my 17 year old daughter found on one of favorite recipe sites.

6 Chicken breast [we have use thighs also]
1 onion -chopped small pieces
1 lg. pkg.shredded medium cheddar cheese [we buy large bag, you get more for the price
1 pkg. flour tortillas [ medium or large]

Sauce: 1/2 c butter or marg.
1/4 c flour
2 c chicken broth
1 can 4 oz,green chille's chopped [ we mild or original hot was to hot for use]
1 c sour cream

Boil chicken, let it cool, then shred chicken. Chop onion into small piece. I have used white , yellow and red. Hey ll taste great. Save 2 c of chicken broth. Take your tortillas fill them with shredded chicken, onion and cheese. Roll tightly place in long 9x11 baking dish. Depends how full you fill tortillas. [This is my job. While I'm doing the filling and rolling, my daughter is making the sauce.]
Sauce: mix ingredients together, until smooth and creamy. Pour over filled tortillas. Place more cheese on top. Bake in oven at 475 for 20 to 25 mins. Until bubble. Let set for 5 mins. then serve. May be frozen but in the household never makes to freezer and there is only myelf, daughter and her boyfriend. Who always seems o be around when we fix these.
