I'm such an airhead!! Why haven't I thought to ask you helpful ladies this before?! [facepalm!]
I am ADDICTED to the white queso (cheese) dip mexican restaurants serve with tortilla chips (Addicted may even be an understatement, I could LIVE off this stuff, YUMMM!!)... My 2 favs, if you have this near you, are Casa Grande and Mexico Restaurant. I've tried buying just about every white queso under the sun (the pre-made stuff in the mexican food aisle) and can't find ANYTHING close to the melty cheesey goodness that they serve at the restaurant.
Can anyone recommend their favorite? Or at least tell me what's in this stuff? EVEN BETTER do you have a recipe to make your own!? I NEED THIS!... chocolate is to most women as white queso dip is to ME ;)
@BP, of course I asked them ;) We're in there often and they know us, and the owner laughed at me, said something in Spanish, then laughed again and said 'Raquel (that's what they call me, LOL), I'll never tell!!'.... BOOOOO! ;)
@Kate, I know the sprinkle cheese is chihuahua cheese, but it's different from the dip (or the dip has more in it)... I know because I've TRIED!!

Mexican White Cheese Dip/Sauce
Ingredients
1 pound white American cheese, cubed
1/2 cup milk, or as needed
1 tablespoon butter or margarine
2 (4 ounce) cans chopped green chilies
2 teaspoons cumin
2 teaspoons garlic powder
2 teaspoons onion powder
cayenne pepper to taste
Directions
Place cheese, milk, and butter in a medium saucepan over low heat. Cook until cheese has melted, stirring frequently. Stir in green chilies, cumin, garlic powder, onion powder, and cayenne pepper to taste. Add more milk if dip is too thick. Heat through and serve immediately.
You HAVE TO use white american cheese (not white cheddar or monterey jack). You can get Land O' Lakes sliced white american cheese in the deli and it is the only type that will melt correctly. Other than that, I use a can of jalapenos and some of the jalapeno juice and omit that butter. This is the recipe they use in Mexican restaurants. It. Is. Awesome.

Try this:
Queso Blanco
1 cup finely shredded cheese (Monterey Jack, Asadero or Chihuahua)
4 oz cream cheese (half of an 8 oz brick)
4 oz diced green chiles
1/4 cup light cream
2 Tbsp onion, chopped fine
2 tsp ground cumin
salt to taste
1 serrano pepper, finely chopped
2 tb cilantro, finely chopped
Put all ingredients into a double boiler and cook over medioum heat until melted and well blended. Stir occasionally; more half &half may be added to create desired consistency.
Important: make sure the light cream is only that. Some fat free ones or fake ones add ingredients that can affect the final outcome. Also, if you buy pre-shredded cheese, it has additives to keep the cheese from sticking together, and that can affect the outcome too. So shred your own. And the Chihuahua cheese will melt well, but the Asadero cheese will give it a great flavor. I'd use half Chihuahua and half Asadero.
I've had the white queso (comes liquidly in a tub) from Sam's Club and it is pretty good! Not as good as our local Mexican restaurant, but pretty darn close! Have you googled for a recipe?
walmart has it all you have to do is melt it!
I wish the west coast had that in the restaurants! I never had it until I moved to Georgia in 2005. Your right I could live off that stuff too! haha

It's probably some kind of processed white cheese. Why not ask the restaurant? I doubt you will be able to duplicate though but maybe they will tell you enough to give it a try.
Mmmm I like it too! My mom and I think it might be goats cheese. I dunno, I will watch your comments.
I love it, too. I was told to look for farmer's cheese but it's been a long time since I had it or could find it that I can't remember for sure if it really did taste the same. I don't have a recipe either. It's supposedly the same as the grated cheese they use on some foods. Another name for it is chihuahua cheese - at least that's what I think I remember.
