There isn't really a difference in 1st and 2nd foods. Some are thicker and some aren't. I had my son (who is 8 months) on 2nd stage at 5 months.
I started my daughter on first foods at 6 months. She is now 7 months. When is she ready to transition to 2nd foods? Sometimes I mix the baby food with rice cereal or oatmeal, sometimes I feed her the baby food alone. She does well either way.

Our son is 7 months and we bought one round of the Stage 1 foods and they were too runny for him. So, we have been on Stage 2 for awhile. There isn't much difference but more variety. Even the Stage 2 peaches are too runny so we add cereal to them. I'm considering Stage 3 pretty soon, actually. As soon as we run out of what we have.
GENERALLY,BABIES START 1ST FOODS AT 3-4MO AND AFTER GETTING THRU ALL 1ST FOODS (AFTER TRIING EVERY ONE X 3 SEPERATE OCCASSIONS CONSISTANTLY)MTW OR BRKFST,DINNER,LUNCH THE FOLLOWING DAY ETC..THEN THEY ARE READY USUALLY BY 5MO OR SO,IF STARTED AT 3-4MO. SO STAGE THREE FOODS ARE USUALLY AT AROUND 8 MO, THEY USUALLY EAT OFF A SPOON BETTER AND CAN HANDLE THE CHANGE IN TEXTURE-IF THEY SPIT OUT STAGE 3 FOODS AS THEY START NNEW ONES,DONT ASSUME THEY DONT LIKE IT,IT IS THE TEXTURE THEY ARE GETTING USED TOO.START WITH VEGGIES THEN FRUITS AS A RULE. BECAUSE IF YOU DO THE REVERSE,THEY WILL NOT LOWER THEIR STANDERS TO THE BLANDNESS OF VEGGIES.THE FRUITS ARE SWEET SO HOLD OFF! OR DO FRUIT AND CEREAL @BRKFAST,FRUIT AND VEGGIE,@LUNCH,VEGGIE AND CEREAL @DINNER AND IF A SNACK LATER...CEREAL ALONE OR ?THEY THEN DRINK LESS BOTTLES,BUT OFTEN HAVE THEM ONLY IN BETWEEN FEEDINGS LIKE 3-4 BOTTLES A DAY OF 5-8 OZ DEPENDING-2 HRS EARLIER OR LATER THAN THE MEAL.

I started our daughter on 2nd foods when she was about 6 months old. The only difference is the containers are larger and there is a wider variety to choose from, including meats.
I did not wait all that long to transition my daughter. The biggest difference I saw was the size of the containers. Once my daughter started finishing the smaller containers quickly, I switched. There is a little more variety with the 2nd foods. I also tried the Gerber Lil' Sides. My daughter gagged on them - and she usually eats anything. So, I think table food is our next step.
The only real difference besides for variety is textrue, the 2nd foods are a little thicker, this transition usually goes really smoothly. Now 3's are very thick and have chunks in it, my son hated these, he did better on real food. If she does good on the other stuff the 2nd foods will go good, you could always try it and if she spits it out she is not ready. Good luck.
