Grilled peaches are AMAZING!!! They make a beautiful dessert. Just cut them in half and lightly grill until they get nice grill marks.

I just bought some fresh peaches from a local grower. I've been buying one or two at a time at the grocery store and just dicing them and sprinkling a little sugar on them. But now I have 5 or 6 ripe peaches (too much for me and hubby and 2 yr old). What can I make for desert tonight? Not sure if I have the ingredients for anything exciting. Would love to hear what y'all are doing with your fresh peaches.
Using one poster's website "recipesource" ... I found a recipe for a peach cake. It's in the oven right now. I don't have any ice cream at home (and my son's napping) so I couldn't do that one tonight. I may do the biscuit-topped cobbler another day. I am just limited on my ingredients. Lots of websites have recipes with "canned peaches with heavy syrup" which I don't have. Thanks! I may freeze what I have left and make smoothies with the frozen peaches another day.

Or you can always freeze them. Cut them up, sprinkle with sugar to prevent browning and freeze. Then whenever you want peaches you can get them out to cook or fix.
I just made this Grandma's Easy Peach Cobbler recipe for a family reunion and it was gone in no time! Rinse off your peaches peal very gently with a good sharp veggie pealer. Then slice into small slices (like they come in the can). I mixed the fresh peaches with about 1 cup sugar and added about 1 TB spoon of peach honey. Set aside. You may also substitute 29 oz. can sliced peaches, juice reserved.
Mix:1 cup all-purpose flour, 1 cup sugar, & 2tsp. baking powder; Mix well. Blend 1/2cup of milk into flour mixture until moistened. Pour into 2 quart casserole with 1 stick butter, melted. Pour peach mixture (or can peaches and reserved juice) over batter. Do not stir. Bake at 350 degrees for about 30 minutes. Can be reheated to serve warm at 350 for about 15 minutes.
Enjoy! Especially with a scoop of homemade Vanilla Ice Cream!

We've been freezing peaches off our tree for the last week, and have 23 quart bags in the freezer right now. We had a bumper crop, but they are small.. (I should have thinned them.... we would have gotten bigger peaches that way.)
If you get a surplus of fruit again, it is very simple to freeze them... I blanched them in boiling water for 30 seconds, (makes it VERY easy to peel.. the skin just slips off), pit and quarter. I put them in a quart measure, and add 1/2 c sugar and 1 TBSP fruit fresh (keeps the fruit from browning). I put them in a quart size freezer bag, wait a few minutes for the juice to form, squeeze the air out of the bag, and freeze (freeze them laying down for easy stacking).
We'll be enjoying the bounty from our tree for the next several months this way!
Peaches can be used for a desert, go in jello type salads, if you plan to save them, blanch them in hot water just for a few seconds take out and then put in cold water, the skin will just pull off, cut into slices and freeze add lemon before hand so they will not change color (pectin) Later if you want you can make ice cream, cobbler for the winter etc. I am jealous would love to have some fresh peaches right now.
I love peaches with pork (also good with chicken breast). Just slice and grill with the meat. Peaches are easy to freeze too. Just slice and spread out on a cookie sheet in a single layer and pop in the freezer until frozen solid, then transfer to a baggie (you can do this with seasonal berries also and then you will have them in the fall and winter). One of my fav summer cakes is a peach upside down cake. Just use a box cake mix. Slice the peaches and place in the bottom of a cake pan with brown sugar and butter then follow the directions on the box. Very yummy and easy.
I know you already did something with the peaches but if you have any fruit that is ripe and you dont want to waste it, peel and cut into chunks and put in the freezer in a freezer bag and when you want a fruit smoothie just put frozen fruit in a blender with apple juice and blend! Makes a great smoothie and is all natural! No added sugar! I usually mix a bunch of fruit together to make it. Pinapple, strawberries, blackberries, canalope, grapes, peaches, you name it, it will work.
We made peach milk shakes recently. Just cut up a couple peaches, add a hunk of ice cream and a splash of milk. My child went crazy over it.
No Bake Peach Shortbread Pie
3/4 C sugar
3 TBSP cornstarch
1-1/2 C water
1 pkg (3oz) peach gelatin
3 C sliced fresh peaches
1 shortbread crust (9in)
In a saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 min. or until thickened. Remove from heat, stir in gelatin until dissolved. Transfer to a bowl. Chill until partially set.
Place peaches in the crust; pour gelatin mixture over peaches. Cover and refrigerate until set.
a nice compote, you can put it on vanilla ice cream and the rest will keep in a jar to put on bread....french toast...pancakes, etc...., you could add vinegar and peppers to it to make salsa
Here are three fairly easy ideas and all great for the summer time - I hope you enjoy them!!!!
HOMEMADE PEACHES 'N CREAM ICE CREAM
3 c. mashed canned or fresh peaches
1 tbsp. fresh lemon juice
4 c. milk
3 c. whipping cream
1 1/2 c. sugar
1 tsp. vanilla
1/4 tsp. almond extract
1/4 tsp. salt
If fresh peaches are used, cook and sweeten to taste. Combine peaches and lemon juice. Combine milk, whipping cream, sugar, vanilla, almond extract, and salt. Add peaches to milk mixture. Chill. Churn freeze. Yield about 1 gallon. Any fruit may be substituted for this recipe.

HOMEMADE PEACH COBBLER
2 1/2 pounds ripe, juicy peaches (about 4 cups sliced)
3/4 cup of sugar
4 drops almond extract
pinch of cinnamon (optional)
2 tablespoons butter
biscuit top (below)
Preheat oven to 425°F.
Peel peaches by dipping into boiling water for about a minute then slip off skins. Slice into wedges, discarding pits. Place in a shallow 6 cup baking dish or casserole, sprinkle with sugar and almond extract. Dot with butter and cover with rolled out biscuit dough (see below) for top.
Biscuit Top:
1 cup flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/4 cup butter or shortening
1/2 cup milk minus 1 tablespoon
Whisk together flour, salt and baking powder. Cut in shortening using a pastry blender or two knives, or your fingertips. Stir in milk, all at once, stirring with a fork until dough clings together. Pat or roll out dough to 1/4" thickness and place over peaches. Trim edges, crimp or flute to seal. Cut a hole in the top center for steam to vent.
Bake in hot 425° oven for 15 minutes, then reduce to 325°F. Bake for an additional 10 to 15 minutes, or until peaches are cooked and top is golden.
Serve warm with vanilla ice cream or whipped cream.

PEACH PIE
2 16 oz. cans sliced peaches in syrup
1/2 cup sugar
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
2 pie crusts (top and bottom)
cinnamon sugar
Preheat oven to 400°F degrees. Drain peaches, reserving 1/3 cup syrup.
In a saucepan, mix together sugar, flour, nutmeg and a pinch of salt. Add reserved syrup and cook, stirring constantly, over medium heat until mixture becomes thick and bubbly.
Add butter, lemon juice and peaches. Remove from heat and allow to cool.
Meanwhile, line a 9 inch pie dish with pie crust; fill.
Using a wavy-edged pastry wheel, cut upper pastry crust into lattice strips (optional). Put lattice strips on top of filled pie and dust with cinnamon sugar.
Bake at 400°F degrees 40 to 45 minutes until golden brown.
Serve with vanilla ice cream topped with peach syrup or garnished simply with a sprig of fresh mint.

I've dressed ice cream with them. Maybe you can grill them (as previously suggested) and then add ice cream.
We buy peaches by the bushel, peel & slice them and freeze with a little sugar (or Splenda) and a little Fruit Fresh to keep them from turning brown.
Take out and put in the fridge to thaw for a good dessert that's quick! They're good alone or with some ice cream. You can chop them up and serve over ice cream, too.
Home made ice cream. Cut up or dice up peaches. Peach jello, whipping cream, half and half. Its not very good. Its absolutely wonderful.
