Bless you, sweetie, for being so thoughtful. Make her some chicken soup, but make sure you make it from scratch. Make stock first: brown the chicken parts in a little oil in a frying pan, then transfer to a soup pot and cover the chicken with a quart or two of water and a quart of canned chicken stock. Bring the liquid to a boil, then turn it down to a simmer. Add a large onion, two celery stalks with leaves, and a large carrot (no need to peel or trim the veggies, just wash 'em off and cut 'em in four pieces). Add a bay leaf and a couple cloves of crushed garlic. Simmer away for three or four hours or so, until the meat is falling off the chicken bones. Strain the solids out of the broth, and start boiling the broth to reduce it while you pick the meat out of the strainer and set it aside. Now get a fresh large onion, large carrot, two celery stalks, and half a dozen or more mushrooms, and peel, chop, and saute in a little oil or chicken fat until the onion is just getting translucent. Put the veggies and the pieces of meat back into the reduced stock, and taste it for seasoning. (You may want to keep the seasoning at a minimum--- ask your mother in law if she needs her food seasoned more lightly. ) You can pack some soup for the freezer, as well as having a pot ready for them to just warm up. If they want to have a little more substantial soup, they can throw in some rice or noodles when they warm it up.
