i like to make chicken quesadillas on it. To save time, b/c I'm almost always in a hurry to make dinner ... I buy a rotisserie chicken at the grocery store. Use the breast meat - shred that into bite size pieces. I take a tortilla ... I sprinkle some shredded cheese (i use that Mexican cheese mix) ... add chicken/sprinkle fajita seasoning on the chicken... add tomatoes/green chilies from Rotel can (drained)... add more cheese on top.... and then I add the top tortilla. then I transfer this to the grill and close it.... and wait until the tortillas start to brown a little bit.
Use a spatula to transfer the cooked quesadilla to a plate ... let it cool a bit. I use a pizza slice cutter to cut it into quarters. Serve with some sour cream and salsa. We also serve black beans on the side of this dish.

We've also actually made grilled fajitas --- Cut chicken breast meat and/or beef into slices; marinate with fajita marinade for at least 30 mins in fridge. I place the meat on to the hot grill and sprinkle fajita seasoning while it's on the grill. Close the grill and wait until no longer pink inside. Oh so yummy and fast!!
