What Is on Your Labor Day Cookout Menu?

We will be having a weekend long event this weekend and I have started to think of a menu for the whole weekend. We will be having guests stay with us from Friday night to Monday afternoon. So far my menu is:

Fri:
Not sure yet

Sat:
Breakfast - eggs and bacon
Lunch - hamburgers and potato salad
Dinner - Grilled chicken with baked potatoes and salad

Sun:
Breakfast - pancakes
Lunch - Pork Chops and Pasta Salad
Dinner - Pot Roast with mashed potatoes

Mon:
Breakfast - Eggs and sausage
Lunch - Brats, hot dogs, and hamburgers with pasta and potato salad

We're staying with friends Fri and Sat night. They live by a lake marina and we are taking our boat. We provide our own lunch - sandwiches and fruit - and one dinner. I like something quick since we like to spend as much time on and by the lake as possible. I'm thinking of doing a tray of enchildas or king ranch chicken ahead of time, so all we have to do is heat it in the oven for 30min. And serve it with a bunch of yummy fresh tomatoes from our garden.....

I'm not planning to cook. I plan to take advantage of the fact that I have a three-day weekend, get all my chores done Saturday and Sunday, and spend Monday stuffing myself with popcorn and root beer and watching the stack of movies a friend recently sent me.

Dang, you go all out. :P Sounds nice. We are a bit more laid back, even with guests. We always do cereal, oatmeal, yogurts, etc with fruit for breakfasts Monday-Saturday. Sundays we do something a little more involved (french toasts, waffles, pancakes, crepes, omelets, eggs, bacons, sausage, biscuits, gravy, potatoes, broiled tomatoes, that kind of stuff---NOT all at once, but some meal with some of those things, on Sundays). Lunches are either leftovers, sandwiches/fruit, or pasta salads. If I have guests we may do more involved sandwiches, but still sandwiches lol (grilled cheeses where it's feta, red onion, tomato, then cheddar.....or reubens and home fries.....or a good pasta salad). Dinners, I do cook though.
This year's labor day, my dad, his wife, my 8 year old sister, my grandpa, and my uncle are all coming out here to see us...this is V E R Y rare, so I'm serving grilled sausages, pulled pork sandwiches, baked beans, potato salad, home fries, garden salad, a relish tray, my homemade spinach artichoke dip with sliced baguettes, and a veggie tray. I'll make my own dip that goes with my veggie tray. For dessert and to snack on, I'll hollow out a watermelon with a round scoop and serve a fruit salad in it. I might add an apple pie from a little shop that does great fresh baked pies.
We'll play at the beach during the weekend, but on Labor Day when everyone seems to go, we'll stay around the house and visit, eat, do the family thing.

The menu could change, I don't know what is on sale yet. Our sales come out on Wednesday. (The last time we had a really good sale, 4th of July, I got ribeyes for $3 lb and the sirloin steaks for $2 lb.)

Smoked/bbq ribs
Smoked pulled pork sandwiches.
and either ribeyes or sirloin steaks (I love juicy, smoked steaks)
Watermelon,
Homemade boysenberry ice cream with boysenberries from my garden, Home made blackberry cobbler with blackberries from my garden
potato salad

uuuummmmmm, uuuummmmm, GOOD!!!

Really...I didn't expect you to fuss!
Can you add some Creme Brulee French Toast to the Saturday breakfast? LOL

Seriously, we're going to a rib fest O. day and probably having the hamburger/hot dog/potato salad/watermelon yadda yadda on Monday.

We're supposed to travel to see my grandfather, but it's also the weekend the Blue Angels are coming in to town, so I'm not sure if we are going. We normally just do one day of BBQ for weekends like this. We'll see if people come to us or if we go to people, but it's always a blast!!
