we live on taco salad or Chef salad in the summer!
Something else I have wanted to try also is chicken and fruit kabobs. Just takes a little grill time. Or grill some chicken and make a nice Mango Salsa and have tacos.
Do any of you have any cool, refreshing dinner ideas. It is sooooo HOT here!
Thanks for all the great suggestions. I think tonight taco salad wins! I will definately use the other suggestions on the next few nights - this heat wave is suppose to last all weekend.

It's hot here in AZ too. I think we're going to get up to about 110 degrees. ICK! Well for tonight I'm making fried chicken, veggies and tators.

I like to go on the FoodNetwork website and check out their recipes. They have some awesome recipes on there. :-)
The Asian lettuce wraps from ourbestbites.com are amazing. They require some prep time to get everything chopped up, but they are so worth the work. My kids eat so many that I always double the recipe and they'll still be gone within a day. Plus they're gluten free and healthy for my kids...even though they don't realize it!
Hot dogs on the grill & potato salad or maybe even just a bag of chips. I went to the grocery store at lunch time & by the time I got back I felt like a big puddle of goop.
It's just me and my youngest tonight so it yogurt, chips & salsa and freeze pops.
When I'm this hot I want soda, ice cream, cereal...watermelon is good. :)
I'm having tuna salad. Hard boiled egg, Mayo, Tuna.. Usually add celery to it, but don't have any today.
I live in AZ and its hot here all summer, over 100 every day and up to 118 lately! I don't cook at all in the summer. Our latest favorites are tostadas (just heat up a can of refried beans, store bought shells, lettuce and cheese) and chinese chicken salad. We don't grill outside at all. Who wants to stand over a hot grill when its 110 outside???!!! So we use our inside george foreman grill for a lot of things. I also make different kinds of salads and sandwiches. I also do a few pasta dishes. Good luck!

I'd say salad: cobb, chicken mandarin, or some kind of cold noodle salad. This site has great summer food and most are not-too-cookish.

I have a pot roast in the crock pot (won't heat up the kitchen) and will have it w/ a salad and sweet tea - yum!
I took chicken breasts and cooked them on the grill then made a pasta salad and added the chicken. Depends on my mood or what the kids want depends on which salad dressing I use. Another idea, which I am doing tonight, is Pizza on the Grill - I use my bread machine to make the dough in the morning and put it in the refrigerator then tonight I'll roll out my dough, place it on the grill and then put the toppings on it. For a cool refreshing dessert cut up watermelon and/or other melons then mix up some watermelon jello and pour it over the fruit, put in refrigerator to set (it won't be completely set) and enjoy with some whipped cream on top. Hope this helps.

Pot roast had the oven on all day put it on in the AM while I ran the kids to their appts. today (no other time to of cooked)baked potatoes,sliced cucumbers/tomatoes,cantalope
No matter how hot it is I have to prepare cook something
On this 52 degree day, we're having deviled eggs, sausage -Portuguese-, spinach salad, and tatertots. (My son chooses the menu on Thursdays). It's usually 'different', often startling, and always good. Today he was limited to "what we have in the fridge and freezer" since I'm waiting to get paid!
My son and I had smoothies in a bowl (super thick smoothies). In the food processor I blended a bunch of Swiss chard leaves from the garden with about a 1/2 cup of almond milk. I then added frozen banana pieces and some frozen strawberries and let it whirl until it became the consistency of soft serve ice cream. For some protein, I then blended in about 2 tablespoons of almond butter. I added some chopped dark chocolate to my son's bowl, and some cacao nibs and ground flax seeds to mine. It was perfect!
