I make a crab appetizer.
Layer soft cream cheese, then crab, then pico de gallo in each cup.
Super yummy. You can get the pico already made in the veggie section. It is quick to throw together. Just don't let them sit too long, the pico makes them soggy. You have to put that in right before you serve.
Good Luck!
Blessings!

Slice up fruit thinly.... put it in the cups, sprinkle with granulated sugar and cinnamon. And a tad melted butter. Bake till you think it is done.

I do this, but with puff pastry sheets. Which I always keep on hand, in the freezer.
My kids like it. They can even help me make it because it is so easy.
And they like eating it.
Me, I use apples, or nectarines or peaches or bananas in it. Whatever fruit I have on hand.

Oh! SORRY, you said "not dessert though..." well, maybe you can make this but have it for breakfast! LOL

Idea #2) put deli ham in it, shredded cheese of your choice, then bake.

Dice up 1/2 an onion and cook until translucent, drain and add a package of frozen chopped spinach to the onions until heated through. Toss in a bowl with a package of crumbled feta cheese and one egg. Divide into the phyllo cups and top with lots of salt and pepper. Bake at 350 for about 15 minutes.

YUM!

There is an easy dip that i make, i was debating putting in phyllo cups or even the mini cup looking tortillas. It is cream cheese on the bottom, then hormel chili (no bean), then whatever cheese you like shredded, then a black olive. You bake this until hot and yummy :)

Few things come to mind....make or buy a crab dip and put this in the phyllo dough. Stuff with spinach, articoke dip. Use left over beef stew to put inside.

Not quiche, come to find. X0

The batter both leaks out and softens the dough in seconds, so by the time they're setting... They're just little flat goopy "darn!"s. At least not STRAIGHT from freezer to oven. It MAY work to egg wash them and prebakr and THEN add quiche batter. OR jallepenos popper them with 90% cheese & just a tiny bit of egg. But they unfortunately don't work like pie shell.

Bake, créme fraiche, smoke salmon/lox

Ditto nix the salmon... Substitute fresh herbs

Crab cake

Meat "balls" (to tiny meat pies)

Mushroom, Swiss, bacon

Chèvre & Chive w prosciutto/bacon/pancetta
