White Chicken Chili!!
3 chicken breasts (fresh or frozen)
1 carton chicken broth (32 oz)
1-2 jars salsa
1 jar (48 oz) white northern beans
cook 8 hrs on low
when done, shred chicken
if it's too "watery" for your taste, add 1 cup dried brown rice
cook 10 more minutes
Top with shredded cheddar cheese...
DELICIOUS!! :-)
Pulled Pork
1 (2 pound) pork tenderloin (use Pork Butt roast, much cheaper)
1 (12 fluid ounce) can or bottle root beer
1 (18 ounce) bottle your favorite barbecue sauce
8 hamburger buns, split and lightly toasted
Directions
1.Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well. Stir in barbecue sauce. Serve over hamburger buns,
I like this with cole slaw and pickles
Pork Roast, any veggies you like, (carrots, potatoes, mushrooms, onions) a can of cream of Herb Chicken Soup, a can of coke. Cook it all day.
Beef Roast, any veggies you like (as listed above) a can of cream of mushroom soup and a can of coke. Cook it all day.
Boneless, skinless chicken pieces, bell peppers (optional), onions, mushrooms, carrots, a bottle of salad dressing (your choice...french, italian, balsamic, Ranch) 1/2 to 1 cup of water. Cook it all day.
Boneless, skinless chicken pieces, can of coke or 7-up, 1 bottle bbq sauce.
Any of these recipes can be changed to cook in the oven by putting it all in a bean pot (I can help you get one of these!) Cook in the oven 2 hours. You can cook it longer by turning it down to 300 and let it cook. The longer they cook, the more tender they are.

Pork Roast w/ vegetables
Add porkroast, fresh carrots, potatoes and onions to crockpot. Add water So easy!
*cut the vegetables into large chunks
One of my favorites is to put chicken, a can of rotel, a package of taco seasoning & some water. Cook on low all day and serve over brown rice or with tortillas to make tacos. It's very yummy!!!
My son's fav is meatballs
Frozen meatballs
Cream of mushroom soup (any brand)
Golden onion soup - Campbell's brand
parsley
spike seasoning
Dump it all into a crock pot - mix in water to thin
Set on high for about 4 hours (or low for longer)
Before serving stir in two large tablespoons of sour cream.
I serve these over egg noodles.
I put anything and everything in the crock pot. Get creative!
Throw any meat, potatoes and carrots, favorite seasonings and a touch of water and let it cook. It will be great.

One of my favorite new discoveries is chicken breast & Italian dressing. Just dump it in the cooker & turn it on, easy easy! If the chicken is thawed, only takes 4 hours on low, or 8 hours if frozen. The chicken is so tender, practically melts in your mouth! Then you can just whip up some quick veggies to go with. I never have leftovers of this meal!
Do you like meatloaf?
Find your favorite meatloaf recipe, put a small amount of water in the bottom (just enough to cover the bottom so it doesn't stick) mold it 1/2 an inch away from the sides (so, again, it doesn't burn and stick to the sides as it shrinks) and put it on super low if you work long days, just low if you want it cooked in 3- 4 hours and high if you want it done in 2 hours or so.
I also slow cook chicken breast to shred (from frozen on super low to low for a long day). When I get home, I drain, stir in enchilada sauce (it should just shred itself as you stir) and shredded cheese, fill tortillas, stick in a glass pan, top with whatever chicken mixture you have left, more sauce (ends up being one and a half cans in the mix, 1/2 a can on top) and cheese, and cook for 15 minutes in a 375 oven (just enough to warm through and melt cheese). If you have the time to let the mix sit in the crockpot for a little while to warm up on high, then you can just use the broiler for 3 minutes to melt and brown the cheese.
BBQ shredded beef is always good and enough for two days and you can just reheat in the crockpot.
I also have just stuck frozen, stuck together chicken legs and thighs layered in the crockpot when they are fall of the bone tender, I stick BBQ sauce on them and add a starch and veggie to the plate.
You could layer a lasagna (meat sauce pre-cooked) with the no boil noodles (put a layer of sauce down first to reduce burninig) or a spaghetti bake. I've never tried it, but now I might!
Stroganoff, chili, ministrone soup and pot roast are my go to winter recipes but you can make them in the summer too.
I don't like meat anymore in my crock pot unless its roast. I have made the following several times and its really good:
Slow Cooker Lasagna
INGREDIENTS:
1 (1 pound) package Bob Evans(R
) Italian Sausage Roll
1 (9 ounce) package no-boil
lasagna noodles, broken into 2
pieces
12 ounces ricotta cheese
3 cups shredded mozzarella
cheese, divided
2 (26 ounce) jars pasta sauce
1 tablespoon dried parsley
DIRECTIONS:
1. Spray interior of slow cooker with non-stick vegetable spray.
2. In medium skillet over medium heat, crumble and cook sausage until brown. Place in slow cooker. Add noodles, ricotta, 2 cups mozzarella, pasta sauce and parsley. Stir gently to combine.
3. Cover and cook on low for 4 to 6 hours. 5 minutes before serving, top with remaining 1 cup mozzarella cheese. Cover to melt cheese.
We have a new family favorite that is super-duper easy & delish! You take a 3lb. chuck roast & sprinkle it with salt, pepper & garlic powder & plop it in the crock pot. Add 4-5 smashed cloves of garlic, 1 can beef broth, & 1 jar pepperoncinis with the liquid. (I do pull the stems & seeds out, but you don't need to) Cook it on low all day. Take the meat out, discard any fat, shred the rest up & put on sandwich rolls, top with chopped up peppers (I usually also cook up some sweet onion & mushrooms on the stove top to add to the sammies) & top with provolone cheese & run it under the broiler for a few minutes to melt the cheese. Mmm-mmm-good!!
