I have a recipe for a really good Oriental Salad that I usually serve at my summer parties. Everyone always loves it and asks for the recipe. Another salad one that everyone always loves is the 7 Layer Salad...so delicious! If you would like either recipe, message me and I'll give it to you. Some things I have made in the past are tomato mozzarella salad, taco dip, hot corn dip, artichoke dip, queso dip, brownie batter dip. Are you a member of Pinterest? There are some really neat recipes that I found on there. Also, what about kabobs?

Here's what I would serve at my parties - shrimp cocktail, blue crab dip, mini deli sandwiches made with roast beef, ham and cheese stacked high, brie with walnuts and jam melted on top and crackers on the side, fruit tray with strawberries, grapes and cheese, kettle cooked potato chips

You can do a mexican style fiesta :) Try doing a standard mexican rice, then you can do a cilantro lime rice like they serve at Chipotle. You can make different quesadillas, fajitas, enchiladas, taco salads, different dips for chips, guacamole with small warmed totilla shells... etc. You can serve most of this as finger foods and it's not that expensive.

My other suggestion I have is to make a Baked Ziti type of dish. It's large you can reheat for the party and serve with bread and salad.

Everything you can pre-cook/ prepare and reheat. If it's a small group, fondue is always fun!

Take care.

I love baked beans and potato salad, but when we have summer bbq's, I do try to be conscious of those who prefer something lighter. We often grill corn on the cob and serve a tossed salad or other grilled veggies, and a fruit salad.

fruit salad: just buy whatever is fresh, chop it all up into bite-size pieces, drizzle some pineapple juice over it....& that's it! The acid in the juice will prevent browning of the fruit. Lemon juice also works.
**now for my change-ups....I have been known to add: minced jalapeno, mint, cinnamon, a little bit of sugar/Splenda, margarita mixer, &/or even some booze - depending on the group.
**the freshness of the fruit is what really counts, & much better than canned fruit!

We love kabobs. Any meat, any marinade. Yum. It's one of our favs!
We also add vegies to this. My family has their favs. Again, yumm!

This past wkend, my niece made roasted vegies in the oven. Zucchini, yellow squash, onions, baby carrots, red peppers, & broccoli. She lightly drizzled olive oil over the vegies, seasoned them w/ S&P, added some garlic powder...& roasted them in the oven at 400. Totally fresh & totally yumm! When I make this, I use either minced jalapeno or dried red pepper flakes....& sometimes I even use some Parmesan, & always fresh garlic.

instead of bbq'ing, we like to change up things with smoked meats. My DH is considered the Smokin' King in our circle of friends/family. It's one of our most requested entrees! Our standard is to take a pork butt, cut slits into it, fill the slits with Louisiana Hot Sauce, & then fully-coat the roast with seasoned salt, pepper, & garlic. We also smoke beef roasts, chicken, & turkey.

my MIL's potatoes: slice the taters paper-thin. Layer with sliced onions in a baking dish. Drizzle with olive oil (or butter). Seasoning salt, pepper, & garlic. Again, you can add jalapeno or dried red pepper to this! You can also add cheeses, but it's much better without. Bake at 350 for about one hour.....or nuke it.

roasted cabbage wedges: foil pack quarters of cabbage. Slice a pat of butter on top, season w/ S&P, add some garlic & onions on top. Make sure the foil tents are tightly-sealed. Cook on grill....for < 1 hour. This depends on the heat you've got going. :) Totally excellent! We do this with bbqs, smoked meats, & even fish frys.

& speaking of fish frys.....they're a blast! We do them regularly!

black bean salad: 2 cans of black beans, 1 can of corn, 1 can garbanzo beans...all drained. Combine with chopped onion, cucumber, & some garlic. Dressing: equal parts salsa & Thousand Island dressing. Oh, & you can add some jalapeno & cilantro.

I have 50million more recipes to share, but the kids are rolling in....Enjoy!

At bbq's we sometimes roast veggies over the bbq like corn on the cob, sliced squash or zucchini, green onions and mushrooms caps drizzled with lemon and butter.

I also make a pasta salad that my family loves, It's a 1lb. package of dried tortellini pasta (I buy mine at trader joe's) and boil it according to the package, then I cut up the following: broccoli, cauliflower, black olives, low fat salami, about 4 or 5 string cheese sticks cut into small slices, mushrooms, and toss it all in with a bag of spinach salad and low fat balsamic vinaigrette. It really makes a delicious side. You can change the veggies up a bit if you don't like all of those. It's also a good idea to pour the bottle of balsamic vinaigrette over the pasta after its cooked so it doesn't all stick together and then chill in the fridge while you cut up the veggies.

My mom makes this fruit salad, it can be a side dish or also a dessert. Everyone always raves about It, yet it's so simple. It's 2 large cans of lite fruit cocktail drained, 1 16oz. tub of lite sour cream, about 3 quarters bag of mini marshmallows, and a half to 3 quarters bag of sweetened flaked coconut. Mix all together and chill in the fridge before serving. You can add more or less coconut depending how sweet you want it to be. I don't even like sour cream, but I love this fruit salad.

As far as other finger foods or appetizers, how about chicken quesadillas cut into small triangles with mango salsa, bake up a box of frozen taquitos and serve with salsa and guacamole, spinach dip with crackers and carrot sticks, shrimp cocktail, mini egg rolls, fried portobello mushroom strips with lemon curry aioli, pigs in a blanket, turkey meatloaf sliders, sweet potato fries with ranch dip, there's lots of possibilities.
How about a build your own nachos bar with cheese sauce, beef chili, onions, tomatoes, jalapeños, and sour cream. I also love to make a party mix of mixed nuts, goldfish crackers, and mini pretzels. So good!
Hope this helps, a lot of recipes you can google online also and find some great ones.
