Vegetarian Dishes - Need Recipes

Okay Mamas, I have a happier request of you this week......
My husband has requested that we start to eat less meals containing meat. I have agreed to start off making one vegetarian meal a week and maybe increasing that in time. I have so far made a quiche and a peanut and cheese loaf.
I am asking for tried and tested recipes that you can recommend to me. I have been able to find lots of vegetarian recipes online, but I would love ones that have already passed the taste test.
I am open to any suggestions, especially ones that involve the crock pot.

One of the easiest vegetarian recipes is spaghetti! Just don't add meat! If you want to add something else, put some zucchini in there for more flavor/chunk. :)

Honestly, a lot of what I do is altering my oldrecipes. I replace meat with tofu for chicken, Boca crumbles for ground beef or beans for any of the above, including seafood. This way we can still have our favorites, just meatless. Enjoy!

Sounds like my Husband.
He recently told me that too.
Its a phase of his. I know him.

But the thing is: HE wants to eat like that, but will I or the kids or my Mom who lives with us?
And I am the one that cooks.

I typically make lots of things with veggies, on the side, which can also be a 'main' meal for him. Then I actually make a main meal. Which we all eat.
But sorry, I don't cook according to recipes. I just make my own dishes.
So can't help you with formal recipes per say.

The thing for me is, cooking in a way that EVERYONE can and will eat. Too. I am not a short order cook and will not be.
As it is this week, with all the 'veggie' things I bought per groceries, for my Husband, well that took up almost ALL the refrigerator, space.
JUST for the veggies, HE wanted. And I SHOWED him the fridge. FULL to capacity already. But we also have other groceries and food needs.

So I don't know.
But I know my Husband won't be this way for long.

Plus, we have houseguests coming this week for 3 weeks. THEN I will have to cook for them too, and per whatever the heck we will ALL eat.
And, sorry Hubby, but I cannot possibly cook, only to his liking.
I explained to him, that I already do cook, using LOTS of veggies.

Beans and greens - chop kale (or mustard greens) coarsely. Saute in olive oil with a good bit of garlic, add can of white beans (of course you can use dried beans that are cooked - but if you use a can this is fast too). Cook for 5-10 minutes and serve over rice or pasta. Yum. It is also really good if you saute 1-2 strips of chopped bacon in it (not a lot of meat but adds some additional flavor). Greens cook down a lot so be prepared.

Spaghetti with pesto, salad. Almost all pesto recipes are comparable and you can freeze the pesto in ice cube trays (don't add the cheese) for an almost instant dinner.

I use google a lot to search for recipes. You can find a vegetarian version of anything you're craving.

Try ethnic foods, many of the cuisines use little to no meat, dairy or eggs, so they are vegetable based and a full meal. I'm thinking, Thai, Chinese, Indian, Middle Eastern, etc...

Stuffed Portabella Mushrooms (easy!)

Preheat oven 350.

Cut stem and scrape gills off 4 mushrooms. Set aside.

Slice and dice the following: bell pepper (yellow and red), zuchini, onions, and carrots; heat some olive oil w/garlic in a pan, add veggies till they are softened; add 1/2 c mozzerella cheese, 1/2 c shredded parmesan cheese, 1/2 bread crumbs; lay mushrooms on foiled line cookie sheet (stem side up) and fill w/veggie mixture; bake for 15-20 mins.
