I would like to add more non-meat meals for my family. Can you share your favorite recipes? Do you have a go-to cook book or website that has some yummy meals. Can't wait to try some out--thanks!

If you haven't tried it out, look on www.allrecipes.com
They really have a good selection of recipes. I use their site all the time when I want to try something new. I just went on there to see what would happen if I searched for vegetarian recipes, and it brought up 200 recipes.
I use the gardein products sometimes...they are really good... I make a good vegetarian taco salad out of the morning star crumbles. Also roasted potatoes and halved shallots (with olive oil and salt) have become a staple in our house... we also like cold quinoa salads, barley with leeks and sauteed pears, roasted eggplant with feta, roasted asparagus with balsamic and soy sauce, veggie sandwiches with roasted red peppers/zucchini/portabella mushrooms, puff pastry stuffed with goat cheese, leeks, spinach and herbs - topped with fresh greens, veggie pizzas - you can use pesto, bbq sauce, regular pizza sauce etc and top with any veggies you like... the thing that I have found switching over to vegetarian is that we often don't have a "main dish, " it is more like multiple side dishes.
There is a book we enjoy - Better than PB and J. Kid friendly meat free meals.

Look for morningstar farms(my fave), tofurkey, veg-life, quorn,wellington and boca products at your local store, just replace your meat with mock meat, my husband has a few cute names for them (he likes it all though)"fak-on" "not-dogs" "no-sauge" and my favorite "sham-burgers"
