My husband for health reasons has recently switched to a vegan diet and it has done wonders for him. Apparently he is allergic to many things in dairy and the main allergy was never realized until recently. That said I am new at cooking vegan, but with his help we are learning. Right now I have been looking for vegan cake recipes. I have found many out there, but having no luck finding one for a plain vanilla cake. My question is there an easy trick to make the cake vegan and what do I do about the icing. Thanks everyone in advance.

Google, Miss A., is our friend. While I'm not vegan I'm pretty much organic and yep, there's a difference in baking organic so I'm sure there's a huge difference in vegan.

have you looked at the cafe gratitude cookbook? they may have something.. I have tried their vegan/raw banana coconut cream pie and it was DIVINE.... as well as their vegan sorbets... for the pie, it was topped with coconut cream and was VERY light. however, I thought it "might" be something you could also use or adjust for frosting on a cake.. anyway, check them out... best of luck..

I just wanted to mention (in case you have kids) that they cannot do totally vegan because children cannot convert the beta carotene of vit A (in fruit /veg)to retinol, they need animal fats to do so.

lemon juice and powdered sugar make a nice glaze instead of icing, fake butter and sugar alo a good choice.....there are vegan cream cheeses that are nice, especially blended with sugar.as far as batter--- You can omit eggs by using cornstarch and water..........you can also use flax seed and water.
i usually use yogurt, but thats not vegan
as far as milk ingredients, almond , rice soy, hemp, oat, milks are excellent choices
