Tweaking a Recipe. Need Help Right Now, Please!!!!

Hi all of you Mamas, and fabulous cooks! I used a new recipe for French Dip sandwiches this morning, and have a roast in the crock pot. The recipe called for 1/2 cup of soy sauce and beef broth as the cooking liquid. I debated cutting down on the soy sauce, but went with the recipe. I just came home from picking my son up from kindergarten, and the whole house smells strongly of soy sauce. I don't want the roast to taste like nothing buy soy sauce, especially since my kids are picky eaters. What can I do to neutralize the flavor? Should I pour in a bottle of beer? Add some water? It looks like there won't be enough liquid anyway since it's supposed to cook for another 5-6 hours. Any thoughts would be appreciated! TIA

So What Happened?

Thanks all! I didn't have any potatoes on hand, so added some water and garlic. I just went out to pick my daughter up from school, and now the house smells less like soy sauce and more like roast beef and garlic. Thanks for the tips!

Taste it. It might smell like soy sauce more then it tastes. If it tastes to salty or too much like soy sauce, add water and a potato. You could also add beef broth which would taste great, but I wouldn't if it's too salty.

I would taste it first. Soy sauce usually has a stronger smell than taste. If you think that the liquid isn't enough, I would add water. If you want to neutralize the salty flavor, add about 3 tbsp of sugar. I calculated that according to the amount of soy sauce you said you already added. I live in Japan. My husband is Japanese. So I have loads of experience cooking with soy sauce. If you want to make it a milder soy sauce flavor, you can add sugar, mirin, or a cooking sake. Since you probably don't have the mirin or sake on hand sugar is your easiest option.

I'd start by tasting it. If it has a decent flavor, add water. If it needs something like less salt, maybe add a potato or two. The potato will pull some of the salt - and then you can pitch them if you don't want them. I can't suggest adding any other liquid since I don't know the exact taste you currently have. Good luck!

Pour in some water. Martha Stewart also says that you can throw in a raw potato to absorb some salt. I would also throw in some garlic and to add more depth of flavor. Just a thought.

I'm not sure, but I think adding more liquid would be bad. When I make pork roast in the crock pot, or ribs, or any meat for that matter, I use very little liquid. Usually just enough to cover the bottom of the crock before I add the meat. 1/2 cup of soy does sound like quite a bit, but i am sure the recipe was tested. I would only worry if your roast is particularly small. Soy is pretty salty and I bet if your son tries it he will like it. Most kids like salt!

Taste before doing anything. Add some water, a potato if it's salty to absorb some of the salt, and garlic. Even picky eaters like the taste of garlic, every child I know likes or loves it, and it will add another depth of flavor as another mama suggested.

How big is the roast?

Also, are you using No Added Sodium beef broth?

I would add some water and when it gets closer to done, you can cut carrots and potatoes, surround the roast with those and they will absorb some of the salt. Don't be afraid to taste the liquid first, though. It may smell strongly of soy, but that doesn't necessarily mean it will taste super-salty.

Yes to the beer and water. You could also add more beef broth. Honestly, the recipe is just a suggestion - add to it as you see fit. Definitely taste it before adding anything, though, and taste as you go. It may taste different than your house smells...
