Tips for Making Boneless Turkey Breast Roasts for Thanksgiving

This Thanksgiving we are trying something a little different with the meat. We bought 3 of those Butterball Boneless Turkey Breast Roasts ( i think like 3 lbs each). We have a newborn and we are just trying to keep things easier, plus when we make a whole bird so much just seems to go to waste... Anyway, I'd like to put them in our electric roaster oven to keep our oven free. I think the Roaster we have is 22 qt, its pretty big. Can I put all three of them in there together? If not I have another electric roaster thats a little smaller, maybe i could do 2 in one of them and 1 in the other? Any tips for making these? I'm not a very good cook at all, lol, so any tips are appreciated! We have aprx 12 adults and 4 kids that will be here. Is this enough since its all breast meat? I know they usually say 1 or 2 lbs per person, right? BUt thats when making a whole Turkey where there is bones and dark meat that doesn't get touched by anyone that we have here..... THANKS for your help!! :)

20 mins a LB plus 20 mins over so for the 3LB breasts thats about 80 mins if you do them all at the same time. Put a bit of butter on them and season with pepper. Add some poatoes in a little olive oil and you will have roast spuds too since they take about 80 mins to do too!! You will only need about 1/2 LB meat per person - imagine a steak at about 8oz per person - with all the trimmings that is A LOT of meat!

I'm not sure about using a Roaster, but my MIL last year put a turkey breast in the crock pot with a stick of butter and it was awesome. I believe she seasoned the breast a little bit, and then just let it cook. It was so moist and tender, I definitely recommend it.

I don't have a suggestion but am eager to see what the responses are. I have a turkey and a boneless breast - we have 22 people for dinner and we want lots of leftovers - and we always send home "packages". So I'm curious to see what people say about the turkey breast! As for me I like the dark meat and I make soup out of the balance. yum.
