I'm traveling to Phoenix this weekend and have most of the day Saturday open (free until 6pm).

Take clothing for hiking, and climb Camelback Mountain for great views.
Go to the Phoenix Art Museum - it's wonderful.
If you like window shopping, Scottsdale is fun (but expensive). If you eat lunch in Scottsdale, go to Backstage in the Arts Center. Their lavosh is delicious! And you can sit on the deck under the mist and look out over the Arts Center.
The Pointe is a great restaurant, nice views, and you can sit in the bar area (at least you used to be able to) and play backgammon while you drink yummy drinks with little umbrellas. : )
