Thanksgiving Potluck at Work (Ideas)

Hello,
I have always gotten some great ideas on this site and thought I'd try again. My husband is having a potluck at his work. They're providing the turkey and ham, and the employees are responsible for the rest. Anyone got an idea that would be really good? I don't want to be lame and send him to work with something that's just "average" or hand him a loaf of french bread (let the young single guys do that, lol). I'm thinking maybe an apple cheesecake, but it wouldn't feed but about 8 people (too much trouble to make 2 or more though). Does anyone have a non-desert side dish that would rock peoples' worlds, and hopefully serve more than 10?

So What Happened?

I did a cranberry sauce that I got from a reply, AND the corn casserole. The corn casserole went well with the spinach madeline, so it was good. Thanks guys!

I can help! This is a WONDERFUL corn casserole side dish for Thanksgiving. It's easy to make, it's a huge crowd pleaser, it'll feed many (you bake it in a 9x13 casserole dish, and best of all it's by Paula Dean so you know it'll be mouthwatering! I've made it many times and it is a huge hit everytime! Here is the recipe:

Corn Casserole (courtesy of Paula Dean)

Ingredients
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar
Directions
Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

I know how you feel. I have 3 small children and a full time job so time is important to me. Here's a recipe that's quick, easy and very tasty! and it's no bake!! Best wishes and Many Blessings.

Pumpkin Twinkie Dessert

1 package (15 ounces) Hostess Twinkies (10 Twinkies)
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 container (8 ounces) frozen nondairy whipped topping, thawed, divided
2 packages (3.4 ounces each) instant vanilla pudding
1 can (15 ounces) pumpkin
1 ½ teaspoons pumpkin pie spice
1 cup milk
Additional pumpkin pie spice

Slice Twinkies in half lengthwise and place cream-side up, in single layer in 9 x 13-inch baking dish. Using a mixer, blend together cream cheese, confectioners' sugar and ½ of whipped topping until smooth. Spread evenly over Twinkies.

Combine pudding mix, pumpkin, pumpkin pie spice and milk. Whisk until well blended and layer over cream cheese mixture. Carefully spread remaining whipped topping over pumpkin. Lightly sprinkle with pumpkin pie spice. Refrigerate several hours or until set.

Makes 9 to 12 servings.

Hi, A.! This is a recipe that I've taken to many church and work functions and it's ALWAYS been a hit! And, it's fairly simple to make - just put it together the night before and put it in the fridge - the flavors will blend and it will be truly scrumptious!

7 Layer Spinach Salad

1 bag spinach, rinsed and torn into bite-size pieces (I also remove the larger stems)
1 10 oz. box of frozen peas
1 package of bacon bits (either a bottle or a plastic pouch)
8 hard boiled eggs, peeled and sliced or chopped
1 bunch green onions, chopped
16 oz. jar of mayo, thinned with milk to pouring consistency (should be about like ranch dressing)
1 8 oz. bag shredded sharp cheddar cheese

Start with the spinach - make sure it's dry and put it into a 13x9 baking dish. End with the mayo dressing, then the cheese. Add all the other ingredients between the spinach and the mayo, in any order you wish. That's it!

What about some really good salads? You could make one or a couple and they will feed many.
My favorite is the Broccoli Salad:
1/4 cup bacon bits
1 head fresh broccoli florets
1 cup shredded Cheddar cheese
1/2 cup raisins
1/2 cup hulled sunflower seeds
1 red onion, chopped
1 cup creamy salad dressing, e.g. Miracle Whip ™
1/4 cup white sugar

Another favorite that we have brought before is Pea Salad-I don't like it but so many others do. There are tons of recipes on Allrecipes.com for this one and many others.

I also make corn casserole using the same recipe as Lori's below - it is super yummy! I also have a sweet potato casserole that is incredible - I'm normally not a fan of the sweet potato :)

Ok this is not a idea .... but this is for Lori about posting the idea about the corn casserole .... i tried this for my thanksgiving dinner and boy can i tell it was mmm mmmm good ... my daughter who TOTALLY hates sour cream ate the living mess out of this and she seen me make it all up...thanks for the idea of making this .... now i will be making this almost all of them time ... lol .... hope everyone has a great thanksgiving
