I love sweet potato balls, you make it mashed then take a large marshmallow and mold potatoes around it then roll in crushed walnuts and bake when they are done you will see a little of the marshmallow seeping out. SOOO YUMMY!!
I have to make sweet potatoes for our Holiday lunch at work tomorrow: How would you prefer them to be made? Mashed or baked? any insight would be great :-) There is about 20 of us and Tons of other food, so its not like everyone will be needing to 'fill up' on them. TIA
Thank you All very much for your Delicious Advice !! :-) I think I'm doing the sweet potato "fries" option ! Were having prim rib and someones else is doing a mashed potatoes w/ Gravy.... SO I figured some salty crunchy bites would be nice.

Take this and they'll beg you to bring it every week! It's SUPER easy to make and you can double or triple it. I tripled it and put in a large, foil lasagna pan for our company holiday luncheon. I posted this in answer to another question today about side dishes:

**If in a hurry -buy a few bags of Ore Ida Steam and Mash sweet potatoes in the freezer section. Steam according to directions, but don't add any milk or anything when mashing -just mash them up and follow the recipe below.

I like to cut up my sweet potatoes into thin slices or into sticks (to look a little like fries), spray a cookie sheet or spread a little extra virgin olive oil on the cookie sheet, and put in the oven and bake - so yummy and healthy!
mashed then baked with the marshmallow on top, my SIL's mother just brought a casserole to my house and they were beautiful! she kind of checker-boarded the casserole with the mini marshmallows and they looked great. we do ours mashed with crushed pineapples, brown sugar and butter
My absolute favorite way to eat sweet potatoes is to cut them in quarters lengthwise, then cut the other way into even chunks (maybe 3/4"). Drizzle with olive oil (EVOO), add a little Kosher salt and pepper, toss until evenly coated and bake at 350* until browned, turning after 20 minutes or so. My son LOVES them like this, too!
I have also made them in thick slices the same way. I just cut them like you would potato chips, just in 1/2" to 3/4" slices. They come out soft on the inside and it is YUMMY! The salt and pepper balance out the natural sweetness wonderfully.

I think they are easiest to prepare and easiest to serve if you peel them, cut them into spears, and put them on a baking sheet. Drizzle with a little olive oil and the seasoning of your choice to make oven fries. I just use some black pepper and a very small amount of salt, but you could use something else. They are also very good if you cut a few yellow onions into wedges and throw those in at the same time. You save time mashing them, and people can take a few or a lot depending on their wishes. Just reheat before serving even if just in a microwave.
make the in a crock pot. peel and dice the potatoes. add brown sugar and about 1/2 - 1 cup applesauce. cook on low or high until tender.
I prefer them baked w/ just brown sugar.
Well this response will be too late but figured I'd share. I'm making twice baked sweet potatoes for Christmas day at my parents. Cook as many sweet potatoes you want in the microwave and let them cool then slice them in half (length wise). Scoop out the flesh and mix with butter (or margarine), vanilla, cinnamon and brown sugar. Put that mix back into each of the sweet potato 'cups' then add mini or regular marshmallows on top of each one. Broil on high for 5-10 minutes. They are delicious!
In a buffet setting I would expect more of a sweet potato casserole rather than 'plain' sweet potatoes baked/mashed. Maybe that is what you meant though :-)
