ok...this might sound dumb but I have some sweet potatoes I'd like to cook up and I can't find that many sweet potato recipes that even sound appetizing (other than the typical candied yams at holiday time). Any one know of any good recipes?

Thank you soo much everyone. All the recipes made me salivate as I was reading them. Now I just need to go and buy more sweet potatoes so that I can try all the recipes. :) I'll let you all know how everyone liked them! Thanks again!!

An alternative when baking them is: After they soften, split them open (as you would a normal baked potato) and cover them with carmel sauce and marshmellows (this is more like dessert it's so good) and put them under the broiler to brown the marshmellows.

My son loves them shredded and baked into cookies or muffins. They also work well mashed with a little butter or made into a bread (like carrot or zucchini breads). Good luck!

You can bake them or fry them for french fries... very healthy and yummy. For the most part, you can just use them to substitute for almost any other potato recipe.

I sometimes take a jumbo sweet potato; slice it and fry the slices in butter or margarine and sprinkle sugar or splenda. We raised sweet potatoes and that was one of our favorites.

I know this sounds really weird, but I swear if you like Feta cheese, you will LOVE this recipe.

Roasted Sweet Potatoes with Feta Cheese
Ingredients:
3 good size sweet potatoes cut into 1" chunks
Olive Oil to coat the sweet potatoes
Salt
Pepper
1 Package of Crumbled Feta Cheese

Directions:
Heat oven to 350
Toss the sweet potatoes in olive oil to coat
Salt and pepper the sweet potatoes
Spread potatoes out on cookie sheet
Cook until tender (about 1/2 hour)
Pull out of the oven and put in a bowl.
Stir in feta cheese.

I swear this sounds like a weird combo but it is SOOOOO tasty. I had a friend who made it at a dinner party one night and we all just went nuts over it and my husband doesn't even like sweet potatoes and requests this recipe often.

chop them into large circle chunks, put them in a slow cooker with a pork loin, large chopped onion wedges, finely chopped garlic, and home-made teryaki sauce (look up recipe on web, and two cups of chicken or vegetable broth for the all-important liquid needed in a slow cooker. cook for about 5 hours on high or 7 to 8 on low and i swear you will never eat sweet potatoes any other way in your life. serve it over brown or white rice according to preference, and make a salad. this recipe is SO GOOD i can't live without having it a few times a month. YUM!

Hi N. ~ I just love sweet potato french fries and so do my kids. You just cut them into the shape of a french frie and put olive oil on a baking sheet and the place the pieces on the baking sheet add a little garlic salt and bake them at 400 for about 25-30 mins. They are so good and a great addition to a turkey burger. Also, you can just bake them, slice them open and add fillings like a stuffed potato, the Claim Jumper has the best Cajun chicken stuffed sweet potato. Finally, the thing I love most about sweet potatoes is that you can get the with the plastic wrap already on them and microwave for 6-7 minutes and then eat the plain, they are soo good, you don't even need to add anything to them. We just tried sweet potato fries and our kids loved them! I just cut up the sweet potato into "fry" shapes, put them on a cookie sheet and baked them in the oven for abouit 30-45 minutes, depending on how crispy you like them. I sprinkled a little salt over them about 1/2 way through. Healthy, sweet and fun for all to eat!

If you are talking fresh sweet potatoes (not canned), we bake them or cook them in the microwave until they are soft (like a baked potato) and then we eat them with a little butter and salt and pepper. They are delicious. But look for "sweet potatoes" and not "yams." They are actually different things and sweet potatoes are much tastier than yams and have a better texture. Sweet potatoes have light yellow flesh where yams are more orange.

If you are opposed to eating sweet potatoes like a baked potato, you can always bake or boil them and then mix the flesh of the potato with a little butter and brown sugar (you can also mix in a little cinnamon and/or crushed pecans depending on what you like) and serve them. That way they are kind of like mashed potatoes only colorful and sweet.

I love sweet potatoes.

The Japanese make tempura out of them. Check out the Asian section of your grocery for a box of tempura batter. If you have parsley, you can cook them tempura style also. Actually, other than very wet vegetables like cucumbers, you can cook most vegetables tempura style. Take it from a Japanese American from Hawaii!

I love sweet potato fries! Here's a healthier version I found on the internet. Enjoy!

Category: Sweet Potato Fries
Serves/Makes: 8 | Difficulty Level: 3 | Ready In: 30-60 minutes

Ingredients:

4 large sweet potatoes -- scrubbed but unpeeled
Olive oil -- for drizzling
1 teaspoon coarse salt -- or to taste
1/2 teaspoon freshly ground black pepper -- or to taste
***Pink Yogurt Sauce***
1 cup plain yogurt
1/2 cup sour cream
3 tablespoons grated onion
1/2 teaspoon ground cumin
2 tablespoons spicy bottled cocktail sauce -- or to taste
1 dash hot sauce -- or more to taste
1/2 teaspoon coarse salt -- or to taste
1/4 teaspoon freshly ground black pepper -- or to taste

Directions:
Preheat oven to 400 degrees. Grease a rimmed baking sheet with oil.

Use a sharp knife to quarter the potatoes lengthwise. Cut each quarter into thirds or fourths to make thick spears.

Place the spears flesh side up on two large baking sheets. Drizzle with about 3 tablespoons oil and sprinkle with salt and pepper.

Roast the potatoes for 35 to 40 minutes, or until they are cooked through. Serve immediately with Pink Yogurt Sauce.

Pink Yogurt Sauce: Combine the yogurt and sour cream in a small bowl. Add the onion, cumin, cocktail sauce, hot sauce, salt and pepper. Stir thoroughly and refrigerate until ready to use. Stir again just before serving.

bake sweet potatoes in oven for about 45 min at 400 degrees or so. take them out, peel them, put the meat of the potato into a bowl. then mash them, add a bit of butter or orange juice (or both). you can then serve this, or keep in fridge and reheat. if you want to go all out, sprinkle some walnuts or pecans on top and stick back in oven for 30 min.

really healthy, easy dish.

growing up in the south, we would bake sweet potatoes and eat them just like a normal potato, baked, cut open, with a bit of butter.

we would also bake them, then refridgerate without peeling. then you can pull out the potato and eat as a healthy snack (we called them ice cream potatoes since eating out of the peel like this was like eating an ice cream cone).

MMMMM, my favorite is,

Mashed Sweet Potatoes

~ Sweet potatoes
~ 2-3 tbl spn of butter
~ 1/4 cup heavy cream or milk (Cream is better) Add more to your desired creaminess
~ 2-3 tbl spn of brown sugar
~ Maple Syrup to taste

Take your sweet potatoes and pop them in the microwave for about 8-10 min. Poke holes in them before. Then stick them in a 350 degree oven for about 15 till they are nice and soft. Scoop out the insides and add a couple tablespoons of butter/or whatever you use. Then add cream, brown sugar and the syrup. Mash, mix or whatever you want. ENJOY

I will sometimes add candied pecans to the top. YUMMM

Hi! N.:
I do have a good recipe for sweet potatoes!! I didn't like sweet potatoes until I ate them like this. Make sure you are working with "sweet potatoes" and not "yams." Yams are really orange inside and sweet potatoes are more of a yellow color inside.
Bake them like you would a regular potato. When done, cut down the middle and mash the inside. Drizzle with soy sauce & sweet chile sauce and top with crushed peanuts, chopped fresh cilantro, and bean sprouts. Sounds odd and maybe not good but tastes GREAT!! Hmmmmm.......I might have to make this tonight!

Try making sweet potatoe fries....they are really good, and I don't even like sweet potatoes. There is a recipe on food network from "Everyday Italian". Good luck.

Ooooh. we eat sweet potatoes like regular baked potatoes.
Bake them and when they come out and you split the top open, put in butter, brown sugar and cinnamon. YUMMMMMMY!

I have heard that you can make some really yummy baked fries with sweet potatoes...I dont exactly know the recipe but I have heard alot about em'. Maybe look for that and see what you can find =)

Preheat oven to 375
Thinly slice up some sweet potatoes width wise.
place sweet potatoes on an oiled (preferably olive oil) cookie pan, being sure to coat both sides of the sweet potato with oil.
Sprinkle a little pepper on the sweet potatoes and put in the oven. Cook them until lightly brown, and be sure you turn them over at least once. These are kind of like home baked potato chips, but they taste really good hot.

I cut mine up, drizzle with olive oil and add a chopped up onion and roast at 375 or 400 for about 45 min to 1 hour, until they are tender... really yummy and not sweet. you can season it with a little thyme if you want.

sweet potato fries! my new favorite thing to eat ;) they are so yummy and better for you than regular fries. super easy to make too and my kids LOVE them. I use this recipe from food network, minus the taco seasoning (so not needed) and I just use regular salt.

Extra-virgin olive oil, for lightly coating
6 large sweet potatoes, peeled and sliced like steak fries
2 teaspoons kosher salt
1/4 packet taco seasoning mix

Preheat oven to 425 degrees F.
In a large mixing bowl, drizzle oil over the potatoes and toss to coat. Add salt and taco seasoning mix and toss. Place sweet potato fries in one even layer onto a baking sheet. Keep space between them so they get crispy on all sides. Bake in batches.
Place into the oven for 10 minutes, then flip them over. Place back in for 10 more minutes. They should be soft on the inside and browned on the outside. Let them cool for 5 minutes before serving.
* You may substitute baking potatoes for sweet potatoes. However, when placing back into the oven change cooking time to 5 minutes instead of 10.

This recipe is quick, easy, delicious, and filling.

The ingredients may sound gross (I thought so before I tasted it put together).

Bake the sweet potatoes like you would a regular potato (it's quickest if you pierce them with a fork and cook in the microwave).

Then on the stove, saute diced green bell pepper (very lightly in tiny amount of oil, 3-5 minutes), add one can of Mexican-style stewed tomatoes with jalepenos and spices, undrained (I cut the chunks into smaller pieces), add one vegetarian vegetable boullion cube, one can of black beans, drained. And a dash of Ground Cumin. Heat to boiling, then reduce heat to med-low, and cook uncovered for 10 minutes, stir occasionally.

To serve, split the top of the potatoes, mash insides, spoon black bean chili mixture on top. You can also add a dollop of sour cream and some cilantro as a garnish.

The flavor combination is really amazing. I was suprised. My hubby loved it too.

Hello, I thought I would let you know that my kids love baked sweet potatoes, you make them like baked potatoes but instead of butter and sour cream, you use butter and brown suger and a little cinnamon. Or you could use them the same way you would to make french fries, kids love sweet potatoe fries. And on a side note coffee just might be my best friend too.

I have a recipe that is so so good. I have never served them to anyone who has not liked them. It is called Sweet Potatoe Pie. Here is the recipe.......

6 small sweet potatoes
1 cup sugar
1 stick margarine
1 cup coconut
1/4 cup milk
2 eggs
1 tsp vanilla

Peel, boil, and mash sweet potatoes. While still warm mix in all above ingredients and mix well. We use a mixer to get rid of any clumps of potatoes. Put it into a 3 qt cassarole dish. In serperate bowl mix 1 cup brown sugar and 1 cup flour until smmoth. Add 1 stick melted margerine and 1 cup pecans. Mix well then crumble on top of potatoes. Bake in the oven on 325 for 30 minutes.

They are not very good for you but they are sure tasty. I hope you enjoy.

7 cups sliced mushrooms
1/3 cup shallots, finely chopped

4 cups sweet potatoes, sliced

1/2 cup chicken broth

In a skillet saute mushrooms and shallots in olive oil until tender.
Add chopped parsley,chicken broth, salt and pepper and mix together.
In medium casserole dish place half of the sliced sweet potatoes, add half of the mushroom mixture, followed by half of the cheese.
Continue one or more layer in the same order.
Cover and bake at 425 degrees for 30 minutes.
Uncover and bake for 20 more minutes.

I used to dislike sweet potatoes, but when I fix them this way, they have become one of my favorite things to eat!

Tastes more like dessert than a heathy vitamin rich veggie.

1. Peal and boil about 6 long narrow sweet potatoes
2. Cut into large even 1 1/2 chucks and lay in casserole dish
3. Melt 1/2 of butter and pour over potatoes
4. Optional, sprinkle some brown suger on top
5. Top with marshmallows and bake at 300 til tops are toasty

Hi N.
Is this for the kids or yourself? You might want to try putting grated fresh ginger in your yams, or even pureeing & mixing w/ applesauce. Or you can cut the sweet potaointo cubes or lengths of strips, drizzle olive oil ove them, add apple slices & onion & hnja at 375 fior 45 minutes. sprinkle with salt. Yummy. or you can do the same & instead of apples & onions, you can add rosemary & garlic.
