Summer Salad Recipe Needed

We are having a Summer Salad Potluck luncheon at work and I need a great, easy, can make the night before, salad to feed 15 people. Any great recipes? Thanks!!

I saw this in my daughters Food Network magazine. Its an "easy" level salad, and I like all the stuff in it. My daughter will go to a different grocery store to get the little small mozzarella ball cheese (the bocconcini) for me as Super Target does not carry that sorta stuff.

I will make this for my big family BBQ this weekend (doubling the recipe..plus I bring my standard crockpot dip ..I would be shot on site if I do not!!)

one of our go to summer dinners is steak salad.. we buy a london broil, marinate it is italian dressing and A1 for an hour or 2, grill it, cut it up into bite size pieces and refirgerate it ... then just make a huge salad- lettuce tomato black olives cucumbers, whatever u like really and add the steak and some italian dressing

This is AMAZING!! You MUST try!!! :)

2 packages of roman noodles UNCOOKED! (throw the seasoning away)
1 package of coleslaw salad
1 cup of sugar
Half cup vinegar
AND Sunflower seeds! How could I forget :) About a cup!

Crunch up roman noodles, mix with salad. Mix the sugar and vinegar together and then mix with the rest. It's best if it does sit in the fridge overnight.

Ingredients sound crazy, I know, but it's pretty good!! :)

I have a great recipe for a chicken bow-tie pasta salad ~ I need to find it (I make it by memory but I do have it written down somewhere), so if you do want it let me know. It's yummy and supposed to be served chilled.

I love this one, but it would be better if you combine all the ingredients about 15 min before serving b/c it can get a little soggy....super easy to do that tho, just mix up dressing and chop onions/nuts and crush ramen night b4. I use a dash of sesame oil instead of toasted seeds and it has the same flavor: http://www.food.com/recipe/asian-ramen-coleslaw-180352

Google "Tortellini Salad" and click on the Allrecipe one!

Delicious! I have made this numerous times. It's even better after sitting overnight and it doesn't have mayo so it can be left outside.

My favorite salad is Italian Salad. Use a package of any type of noodles you want, I like Bow tie because they're cute, a small can of diced black olives, cherry tomatoes sliced or grape tomatoes whole, yellow bell pepper, and a bottle of Italian dressing. Sometimes I will add feta cheese or shredded cheddar but I guess you can use your favorite cheese. I make this the night before so that the dressing can soak into the pasta. I buy an extra bottle of dressing to put on before serving incase all the dressing is soaked up. This salad will last a couple of days so sometimes I make extra to have at home.

The salad that Sarah S. mentioned below, is something that is very popular here in my city. Using "Ramen" noodles.
There are many variations of it. It is good.
Some people add shredded chicken in it too.
And add mandarin oranges, from the can. Without the syrup.

My new absolute favorite is Southwest Quinoi Salad. You can find the recipe easily on the Internet. It's yummy and do good for you. Plus, very easy to make.
