Suggestions for Kale Recipes...

A friend of mine has a garden this year and she was kind enough to give me a bunch of veggies out of it, some of which is kale. I have never cooked anything with kale in it before, so I am looking for some suggestions!
What have you made, that was yummy, with kale?

Kale chips, fast and easy.
Saute butter with garlic and onions then throw the kale in until soft.
I've also made a fagioli soup with it, pasta, garbanzo beans, veggies, etc.
My 5 year old asks for kale, she loves it!

Bake kale chips...super easy.
Kale is also really good in salads or blended in a fruit smoothie!

I have made this great soup with white beans and kale and chicken sausage. Kale can be somewhat bitter if not cooked or sautéed so you will want to cut it up in small thin pieces removing that rib and let it simmer for awhile. It is great.

You can sub it for spinach in most any of your spinach recipies.

We like a combo of kale and spinach, egg, feta, onion, salt, black pepper, and ricotta (pulse in a food processor), put into a baking tray topped with slice tomatoes for a caserole, or make into home made hot pockets with puff pastry, tomato and a slice of pastrami.

we like the following for breakfast sometimes-
sweet potato hash browns.
wilted kale and carmel onions.
seared tomato slices.
a poached egg.

my mom adds kale to her german potato salad-
kale, russet potatoes, onions, salt, pepper, vinegar, oil, a dash of mustard and celery seeds, and dill.

she also uses kale in a summertime cold bean stew. an assortmentof beans, tomato paste, olive oil, salt, pepper, a dash of lemon, and herbs of your choice.

We always cook it with bacon and that makes it yummy. Ham works too, but you need a salty pork.

I've made a lovely kale and white bean soup, made a little rosemary oil beforehand to drizzle on it... heaven.

I've also found a kale with olives recipe I loved (Deborah Madison's cookbook "Vegetarian Cooking for Everyone") and greens with potatoes. I should warn you that kale does make some people very gassy, so be sure to prepare the kale as your recipe directs and maybe add a bit of Beano if necessary.

Wash and tear into potato chip size pieces.
Spritz/coat with olive oil.
Sprinkle some garlic powder or garlic salt
Bake in the oven until crispy at about 300 for about 10 minutes.

You may have to experiment a little to see how long you need to cook them to get the right crisp and make sure they don't get a burnt taste (although, my DH likes the ones that I think taste burnt, but then again, he likes the dark brown potato chips that I skip over!)

i don't care for cooked kale (other than kale chips which are the Yum! i find it difficult to get the consistency just right, though.)
kale is my new best friend. i put it in a green smoothie with fruit every day. it's energy in a glass. and although kale tends to be tough, if you tear the leaves (and pitch the tough center stem) and massage it with a little citrus (i prefer lime but any will do) it becomes more tender and delectable. a little olive oil, a pinch of sea salt and a handful of pine nuts for crunch and you've got a simple salad to die for.

Look up massaged kale. This is the best way to eat it raw, in salad form.

Or throw a couple of leaves in a fruit smoothie. My kiddos love green smoothies.

Don't treat it just like spinach or chard. It's typically much tougher and more bitter. You'll need to cook it, massage it, roast it (aka chips), or blend the heck out of it to make it really good.

I am dieting and have a new found love of Kale. I use it as a salad with a vinegarette dressing and some cojita cheese sprinkled. Also I have plucked it off the stem and thrown it in an asian stir fry with hokkien noodles, looks similar to basil when cooked in stir fry, adds color and vitamins.

I didn't read through all the comments so I hope this isn't already posted but a simple and nutritious side salad with kale is to strip it from the center stalk and tear up into a bowl and then add an avocado and "massage" it with your hands into the kale...add some cherry or grape tomatoes cut up and I like to throw in green onions...delicious and really healthy!!
