okay, let's flip it.....serve him the leftovers from your dinner the night before. As long as it's cooled/stored properly....& then reheated properly, it will be fine for him. Add in some fresh-cooked vegies & you're good to go!
I am stuck in the worst rut on what to feed my son... I have good ideas for breakfast covered.... But I feel like I feed him the same things all the time for lunch and dinner.. he is 11 months old and can eat table food pretty well.. Keep in mind he is lactose intolerant so no dairy.. Also I know everyone says just feed him what me and his father are eating but his father works late and doesn't get home until around 7 so we eat later than he would so i usually don't even start dinner until I am done feeding my son.. Just feel likie the poor child needs variety and I can't think of any ideas.. Give me some great dairy free lunch and dinner ideas for my son... Thanks so much : )

I try to keep in mind when it comes to any meal, it needn't be what everyone else eats for those times. e.g. at breakfast, often, my son doesn't want cereal, he eats lasagne and or other foods that might seem like lunch or dinner foods. I figure it's all food one way or another.. if you can view food that way, then I think it opens your options up a bit..
As for specific foods , have you tried things like Quinoa, beans, avocados, mangos.. how about pasta salads.. even tortillas warmed with minced chicken and avocado is a nice treat.. We do a lot of risotto in our house, which doesn't have cream.. lots of recipes online for that.. also, you can do a cheese mini pizza.. my husband is lactose intolerant as well and he never has cheese on his slice. instead, he gets more sauce and veggies.
again, think in terms of food and not whether it's breakfast, lunch or dinner. once I did that... I found it much easier to come up with food ideas..

It's been my experience that if you can introduce different types of food when the child is young, then his/her taste can develop more fully or at least they won't be hesitant to try new things. We also eat a lot of veggies in my house, this includes raw red bell peppers and carrots..
my lil man is 13 months old and i do alot of corn on the cob he loves it!, also dino chicken nuggets, i make a meat/cornbread meal its ground meat on bottom layer of cheese which u would need to change if he cant have dairy and pour cornbread mix on top and bake. My lil one loves this so much. we do lots of fruits also strawberrys and watermelon. potatoes of any kind, and if hes being really picky some days i just make him pancakes lol it never lets me down . :)
I am almost in the same situation as you, only difference is my son has Sensory Integration Disorder, meaning, its all about the texture. He will point blank refuse "new" foods. He might pick it up but it gets put down without trying it.
Remember at that age he only eats 1/4 of what you eat. So don't overwhelm his plate with tons of things.. pick 3 items, and serve 4-6 pieces of each on his plate. Make sure one item is fruit/veg, the other meat (chicken nuggets/fish sticks or leftovers) and the other item some form of grain (toast, or a slice of buttered bread)
Always have a little sweet thing on his plate, or after dinner. Fruit or yogurt.
Stay persistant, offer him and if he does not eat, don't fret. He might not be that hungry.
My son eats ONLY french toast, chicken nuggets, cheese, yogurt and raisons. (Ok goldfish and grahams too, but I try to not make it available all the time)

I liked everything that can be roasted in the oven for that age: squash, apples, carrots. Mixed with pureed meats sometimes. Fresh juicy fruits raw: watermelon, pear, melon, grapes (with skin removed or just cut in half). Smoothies with fresh fruit and soy milk.
My oldest son at that age LOVED pasta with pesto sauce on it. Little pieces of cut up chicken in it our good. If you want to make it super easy--get the precooked kind from the store.
My husband works late a lot too. I still cook enough so that my daughter can have some the next night for dinner. So what you had for dinner last night, feed you son tonight. That way, he will still get a good variety of foods and you're not cooking two dinners a night.
