I prefer the long-grain brown rice (Carolina brand) - I found a recipe for baking it, and it comes out great every time, nice and fluffy instead of clumpy and sticky. Just follow the proportions on the bag (rinse the rice well, and drain before using). Heat a small amount of oil in an oven proof saucepan, and add the rice to toast it slightly before adding the liquid. I usually use vegetable broth and pre-heat it before adding to the rice. Cover and bake (usually takes around 50 mins. in a 375 oven). Remove from oven, and place a clean dishcloth under the lid of the pot - let stand for 10 mins. then uncover and fluff with a fork. I am not a huge fan of brown rice in general, but am trying to cut out all the white rice, and this is a pretty decent substitute, especially when I add veggies to it. It definitely is better for you, and I find it to be more filling. Good luck with the weight loss!
