Squash Casserole Recipe Sans Onion?

Our garden is running over with yellow squash. I am looking for your favorite casserole recipe that doesn't include onion (husband hates it!). Every single recipe I have looked up includes onion (and lots of it). Thanks!!

Ratatouille

Yellow Squash, zucchini, fresh fava beans, carrot, spinach.. Sauté everything except the spinach in olive oil and garlic and salt and pepper (or pepper blend). Last few minutes add the spinach until it wilts. Serve hot!

Similar sauté : squash w chopped (2") asparagus and halved crimini mushrooms and lemon

Veggie lasagna

Squash au gratin (like Mac n Cheese or potatoes au gratin)

Sub for zucchini in Zuke bread, Zuke soup, etc.

Stuff with tomatoes, basil, garlic, breadcrumbs, parm

Stuff w meatloaf or meatloaf & rice

I wish we lived closer- love squash!! I slice the squash into coins and put in a glass pan. Pour a little milk into the bowl and cover. Steam the squash in micro for about 8-12 minutes depending on how much you have. Should be soft and thoroughly cooked. Top with grated cheddar and crushed ritz crackers. Drizzle with meted butter if you like. Sometimes I omit the crackers/butter. I put sliced green onion in mine from the beginning but you can easily omit. Micro for another couple minutes until cheese is melted. Mix up and serve.

Hmm. Just leave out the onion.

In my opinion, you can't ruin squash. He doesn't like onions? Don't add any.

I love onions but can't eat them. My substitute is using carrots... they are a bit sweet and you won't have to use so much. Also, you can use a bit of thyme to round out the flavor. Will he do chives? They are milder. If so, sprinkle them on top. And if he'll do shallots, then omit the garlic too from the recipe and mince the shallots. The flavor will be a bit softer and will mellow a bit with the squash. You obviously won't use as much shallot as onion. Here's an interesting discussion of shallot v. onion:

I would make the recipe, half with onions for everyone else and the other half without for your husband.

Would he eat it if you made it with half of an onion, that you remove after it has been baked or cooked? It will have the flavor but no actual onion in the dish.

All I do with squash is:
wash it
cut it in half.
take out the seeds.
Then put it on a foiled lined baking pan.
Then drizzled with honey and salt to taste.
Stick it in the oven at about 400 degrees
And watch it and take it out when it is fork tender.
This is good. Simple.
And because you have foil lining the pan, you then don't have anything to wash, after.

Just make the recipe without onions, maybe add some liquid to the recipe to replace the liquid that onion would add.
I make squash often, but dont use onion, to me squash is a stand alone veggie.
I have sautee'd sliced squash with sliced cucumber, it's really good.
Maybe use cucumber in place of onion in the recipes you've found.

Slice it, toss with some olive oil and salt/pepper and roast in the oven at 375 for about 20 minutes or until it is tender to your liking. Can also add sliced red/yellow/orange peppers, asparagus, mushrooms to this and it is even more delish. We have also been know to throw this concoction on the grill to cook it too. Yummmm.
