Hello Moms!

My family and I eat a wheat-free diet, and at home it's very easy now that we are in the habit! However, starting on Tuesday I will need to start sending lunches to school with my daughter. The spelt bread that I buy is from Berlin Bakery,and is great when toasted, or cooked, etc. However, eating it cold, not warm, tastes more like saw dust than it does bread! I was wondering if anyone has any good spelt bread recipes that they use. Or, really any other bread recipe that is wheat-free. I have found some on the internet, and am willing to give them a try, but I thought I might try here first to see if anyone has any good recommendations. I'm trying to avoid wasting a lot of time and money trying to find a good recipe.

Also, if anyone has any suggestions of what to put in my daughter's lunch that is wheat free I would love to hear them! She is a SUPER picky eater. It takes a LOT of coaxing at home to get her to eat her fruits and veggies, so I don't know how she is going to eat them at school on her own! Thanks!

Buy lunch meat sliced so that it is thick enough to roll -- we roll them, dip them in ketchup or mustard and call them "turkey roll ups".

Kroger sells a gluten free millet wrap in the deli section with the other wraps -- its from LaTortilla Factor.

My little one likes the Teddy Puffs from Healthy Times. They are like cereal and wheat free. So far I was only able to get them at Whole Foods or the Internet (Amazon).

Were gf as well. So far I've packed a cheese sandwich on some brown rice bread, I found it's cheepest at Trader Joes 3.something, as to the 6.00 other stores. I toast it a little before makeing it.
I sent rice crisps and cheese cut w/ mini cooke cutters and friut yesterday like a lunchable sort of thing. And was also thinking humus w/ corn chips. We have also used gf pancakes to make sily sandwiches. What about sunbutter ants on a log? Apples and dip mix some sunbutter, or almond butter w/ agave and cream cheese to taste and eat w/ apples. A little lemon or orange juice on the apple slices will help them not brown, but it changes the feel to the fingers. Don't know how much your picky eatter is like mine.
