This may be a little too far south for you; but, the String Bean @ Coit & Spring Valley is great. http://www.thestringbean.com/
Can someone PLEASE tell me a place around Allen, Plano or Richardson where you can get good home-cooked vegetables? This is the first time we've lived somewhere without a Cracker Barrel nearby!!!!!!!!!! Is there ANYTHING similar in this area that we haven't discovered yet?

Have to go with Babe's as well! although they only have pinto beans on the weekends at the store in Garland. :-(
Congratulations on your adoption! We are blessed through adoption with our beautiful two-year-old baby girl and we are also in the process of adopting again. Not sure where you are in the process, but please feel free to pick my brain if you need to!
what about Cotton Patch......
I second Babe's Chicken House. There is one in Frisco and one in Garland. Great food and fun atmosphere.
Have you tried Babe's in Frisco? You can't pick and choose off of a menu, they just bring you mashed potatoes, green beans, salad and creamed corn served family style in addition to your meat (chicken fried steak, chicken tenders, pot roast, fried chicken, fried catfish) and biscuits. It's really busy so the best time to go is a Saturday or Sunday around 3 or 4. Here is there website: www.babeschicken.com They also have a Garland location, but we have never been to that one. I love Cracker Barrel too. At one time I heard that they were planning on building one at 380 & 75, but I haven't seen anything yet. I'll keep my fingers crossed. Best of luck on your search and welcome to Texas!
Luby's Cafeteria? One is located in Plano at Park/Preston area and there is one in Richardson off Campbell and 75.
Black Eyed Pea?? Location at 75 and 15th street Plano and Park/Preston area Plano.
Maybe one of those will be tasty for you!
Babes is awesome! They not only have the Garland and Frisco locations, but also a downtown Carrollton location. If you are in the mood for Cracker Barrel, there is one in Mesquite.
