I am making a potato and ham soup from scratch. The recipe doesn't call for a hambone only ham cubes, but I thought if I use a bone, the soup will have a better flavor. The butcher shop only had smoked hambones which I don't like the smoky flavor, so I ended up getting a short rib. Do you think this will come out good? I'm debating on whether I should use it. The butcher said that short ribs will work just fine although he's never made soup on short ribs!

I am confused because Ham is smoked. So if you don't like the smoky taste, why are you using ham at all? I know the soup you are referring to. You don't need to use anything beyond just the ham cubes. Short ribs are better if you can sear them and caramelize them first. That wont really work in this soup.

I'd save the short ribs for something else. Beef bones can leave little brown bits in your soup which won't look pretty with potato and ham. Ham usually has alot of flavor and plenty of salt. A little goes a long way and the ham cubes should be enough.

Easter is coming. Why not save that Ham bone and wait to make your soup? I boil down my Easter Ham bone and dripping and freeze the broth until I can get to the soup making part. I've taken out a few cups at a time and tossed it in other recipes too and this is soooo good.

I have no experience with the short ribs, but if you are going for potato and ham, I'd save "do it right" so to speak and not substitute (in this case).

I've never tried asking myself, but I heard that Honeybaked Ham throws away hundreds of hambones everyday, and they are happy to give you some if you ask. If you live near one, maybe you can ask them to "throw you a bone".

Short ribs are the BOMB for vegetable beef soup.
For ham and potato soup? Not a clue!
I'd go with the ham cubes.

I make a lot of soup. Ham hocks are good for favoring soup, and inexpensive. You could also use a soup base, or the rib should work fine.

I'm sure it will have a good flavor, though it might taste a bit different. I'd say go for it. Better then using the smoked one!
