I'd like to make some macaroni and cheese in a slow cooker for my son's first birthday party this Saturday. Anybody have a great recipe? I'd like to it be more creamy style, not the "custardy" style. Otherwise any other good suggestions on what to serve with hamburgers/hot dogs that's kid and adult friendly?
i have no idea what "custardy" means, but here is a great one:
8 oz. pkg. dry macaroni, cooked
2 Tbsp. Oil
13oz. can evaporated milk
1 1/2 cups milk (whole or 2% is better than skim)
1 tsp. salt
3 cups (about 1/2 lb). shredded cheese: cheddar, American, Velveeta, OR a combination
2-4 Tbsp. melted butter
2 Tbsp. onion, finely chopped
1. In slow cooker, toss macaroni in oil. Stir in remaining ingredients.
2. Cover, cook on Low 2-3 hours. Makes 6 servings
That is the actual recipe. 8oz. of noodles is not much. I have made this with a 16 oz. box of macaroni, and kept all of the ingredients the same, maybe a bit more cheese. It is SO good with Velveeta, but I feel guilty eating it, so when I make it for us, I use Cheddar and Monterey Jack. If you do use Velveeta, still do a combo, with a sharper cheese like sharp cheddar or colby. Also, we use dried minced onions because sometimes real onions don't get soft in time and we don't like them to still be crunchy.
