Simple No Dairy Sauce Recipe

Hi all,

Does anyone have any great sauce recipes to pour over noodles for a basic Monday night dinner? My son is allergic to dairy and garlic so please no recipes that have those two ingredients. Anything basic that your family loves and I can throw together quickly would be much appreciated!

Jamie Oliver makes an 8 veggies sauce. He roasts all sorts of veggies. Tomatoes, bell peppers, onions, zuchini, and a bunch of other stuff. Then he purees all that with an immersion blender. It makes a thick super nutricious red sauce. He says he makes it in huge batches and freezes flat in gallon ziploc freezer bags so he will have sauce for months after just cooking once. I'm sure you can google it.

For a quick easy version, infuse some olive oil with herbs and spices and use that to sweat tomatoes, zuchini, onions, peppers, and mushrooms and toss my pasta in that. The veggies will give off thier water to make a sauce if you cook them low and slow.

When my parents were vegan, they would make cream sauces out of raw cashews blended with water and onion powder. It was AMAZING! You can use the cashew milk in mashed potatoes, soups, pastas and casseroles.

I think the recipe was:
1/2 cup raw cashews (found in the refrigerated section of a health food store)
1 cup water
sea salt and onion powder (or spices of your choice) to taste.

Asian sauces, do not have dairy in it.
It is good over noodles or for stir fry.
You can make it, or just buy the bottled already made, types.

Usually, Asian sauces don't have garlic, but ginger.

Look online for recipes.

A staple ingredient in Asian sauces is Shoyu. ie: soy sauce.

My kids love Asian food.
It is very common here where I live.

Or, just do a Google Search for "no dairy sauce recipes." Then simply omit the garlic.
Kids won't notice if the garlic is missing in the recipe.

When my wheat and milk allergic daughter lived at home, I'm make sauces from chicken or beef broth:

In a saucepan, heat 4 T oil and 4 T flour (wheat or rice). Mix and cook til bubbly but not brown. Add 2 cups broth, whisk to dissolve lumps, bring to a boil while stirring, turn down and simmer for a couple minutes. Add more broth to desired consistency. Add salt or soy sauce for flavor. Pour over meatballs, stir fry or vegies and serve with noodles, mashed potatoes or rice.

What about soy? Can he tolerate that, because you could always substitute a soy milk or butter for a creamier sauce? I always loved melted butter with parmesean cheese so you could use soy butter and cheese instead?!

I'm not much help I guess b/c my only other thought is tomato, but SH had some good suggestions with various asian sauces!

I saw a commerical for campbell's soup. The beef stew was poured over noodles/rice for a fast meal.

I would also try a red sauce with various spices that don't need to include garlic.

Sautee some onions and add some salt and pepper, dice some carrots/celery/mushrooms and add a few spices .....basil, thyme, rosemary, and to kick it up a bit...some red pepper flakes.

Hi!

Try this:
1 large can plum tomatoes
1 small onion
1 medium carrot, peeled and diced into medium chunks

1. Sautee the onion and carrot together. when the carrot is transluscent add the tomatoes, juice and all.
2. Cook until the carrot is softened then puree.
3. Add a little chicken broth or water to thin out to a consistency you like.
4. Season with salt, pepper, basil or any of his other favorite spices.

This would be better with garlic, but because of the carrot it has a sweetness to it that kids usually like. Good luck, hope you all enjoy!
