I need healthy recipes that the whole family can enjoy that a 2 year old will love. I need to lose weight, but I want to only cook one meal for everyone--not something different for me

Were just talking about this on "feeding the freezer". I am a young breast cancer survivor and have done a ton of research on healthy eating since - I gained 40lbs while on chemotherapy. The way I lost it was doing away with anything that contained additives and MSG (scary stuff, http://www.drhoffman.com/page.cfm/38). I lost about a pound every week. It took some time, but I wasnt able to exercise either, and was practically bed-bound at the time. Another wonderful side effect was that my girls (8&9) are much healthier now too - they havent been seriously ill in years - and I was able to take my youngest off all of her allergy meds (and she had horrible allergies, even used an inhaler). I have also been working on a host of kid-friendly recipes, just wish I had the time to make a book :} I'm actually looking for someone local with some time to do just that.

Some tips tho:

Ditch the veg. oils for saturated and cold-pressed coconut oils (no joke, its been proven that fat doesnt make you fat and the saturated oils stand up to cooking better). Switch your meat portions to role of "side dish" and fruits and veggies take a main seat. This works great in stir frys and stews!

Well, I have two favorite cookbooks: "The Everything Meals for a Month Cookbook" and the Taste of Home Cookbook, the new one that's ring-bound. They both have very good recipes. I've not had a bad experience with any recipe from either book. The first cookbook also is a freezer cookbook, and it has instructions for either freezing for later or for immediate consumption, which makes it very flexible. I have not bought it yet but the cookbook Deceptively delicious is supposed to be great! It has a healthy twist to childhood favorites. you puree vegies and hide them in things like grill cheese and brownies. You still need to encourage your family to eat the vegies straight out but at least you know they are getting what they need from the hidden ones!

THE BEST website, hands-down, for healthy family-friendly menus is www.savingdinner.com. Check it out for yourself! I absolutely love this one and they have books you can buy if you want. There are different types of menus so you can subscribe (very inexpensive and worth every penny) to whichever you want, be it heart-healthy, low-carb, or my favorite Body Clutter. There is a separate book for this one all about the true psychology behind why we carry around excess weight. CHECK IT OUT THO!!!

Vegetarian menus are best for losing weight. I dated a guy once who had lost well over 100 pounds just by going vegetarian (and dropping his liter-of-soda-per-day habit). He still even ate pretty greasy foods! But the problem with meat, besides being high in fat (even the lean stuff is high in fat and calories by comparison to most vegetarian meals), is that it makes us more lethargic. (I remember one time eating a big meal full of meat, and the next day I could barely walk. I didn't realize what was wrong with me until I learned this later. It ruined a lovely Valentine's Day!) So, feeling less energetic, we tend not to be as active.

This is partly why I went veg. I can eat and eat and still not gain weight. (The other main reason is that I learned how they treat the animals, and it horrified me and made me ashamed to be a human being. I believe that anyone who learns how cruelly they're treated would want to stop supporting the industry that treats 45 billion animals, including sea animals, a year - in the US alone - this way!)

You can use just 1/2 cup of canola oil instead of a full cup. Just add a little more soy milk and water. I've done it and it turns out just great. I also have an amazing potatoes au gratin recipe that I stumbled across. My cheese-loving husband loves it better than the old cheesy kinds he's ever had.€ If you're interested, I can figure out where I got it.

Congratulations on your dedication! I found that if I just got 3-4 recipes under my belt, when I went veg, and found some good snacks, I wouldn't even notice. Same thing for dieting, you'll probably find. Many recipes out tehre are as easy as spaghetti. It just takes getting them into our routine.

I was also going to recommend Kraftfoods.com. They have healthy recipes, and can help make planning easier by making grocery lists for you - you just add the recipes you like to the 'your shopping list' feature and it automatically fills in for you, you just print and hit the store. They even have a few recipes blocked out in a 5 meals in one bag section. Their healthy living recipes are pretty healthy, and you can substitute to make them better by changing the type of dressings, pasta etc you use. My 2yo eats the food too.
For cookbooks I love The Sneaky Chef. It shows how to add in lots of fruits and veggies into foods kids love that they might not eat otherwise - broccoli, spinach, cauliflower for example. The recipes include nuggets, fish sticks, mac n cheese, spaghetti, tacos, pizza, pancakes...

I have just started grilling everything. That includes the vegetables too. I have started using EVOO (extra virgin olive oil) rubbing it on the meat, then seasoning it with salt, pepper, rubs and things like that, and then when I fix the veggies (such as zucchini and squash) I slice them thin, put EVOO on them and then season them with a little salt, pepper, seasoned salt,a little butter (less fat and all)and whatever else I think sounds good. I place them in foil and make a little closed packet and throw them on the grill about 20 minutes before the meat. When the meat is done, I take it all off and we have a meal. I usually toss a salad with cucumbers and tomatoes and a fat free dressing. So far I have been doing it for two weeks, and everyone in my family has lost about 10 pounds a piece. The sad part about that is we have still eaten out a couple meals on the weekend. You can grill corn or anything like that. I do the same with that. Try it. I have a 4 year old and she hasn't turned much down. She is a pretty picky eater too.
