Seeking Meal Ideas for Son While I'm Out of Town

Hello Moms! I am going to Chicago, at the end of this month for 4 days! I have never been away from my precious son that long! Anyway, his father will be watching him while I'm gone. I'm looking for some ideas on meals I could make ahead of time so that his father can just grab them out of the freezer and defrost. The easier the better! My son is 16 months old and isn't picky except with veggies. I have to sneak his veggies into his meals. Any suggestions would be greatly appreciated!

It's nice of you to think of your husband, but I'd say let him figure it out on his own.

Your being away is a good time for father/son to find out some things about each other. Mom's always manage and being one I can say that we tend to over manage.

Let them figure out food. If your hubby asks for ideas, great. If not, don't worry. Your son won't starve, your hubby will feed him and if he doesn't eat veggies for a few days he will be just fine.

All of my boys loved cheeseburger hamburger helper and spagetti at that age. You can easily cook these up and they reheat up quickly and still taste great. Just a thought.

Hi T.,
Whenever I go out of town and leave hubby with our 18 mo old son, I just buy a bunch of the frozen Kid Cuisines. They have chicken fingers,pizza,macaroni...and all come with a side of veggie. Another easy one is the Kraft macaroni in a cup that you just add water to and heat up in micro. And for breakfast, I buy the frozen mini pancakes or the cinnamon toaster sticks. I agree that its totally ok if your son does not eat fresh home cooked meals for 4 days. :)

Have you ever given him Gerber Graduates--like the pastas and the Gerber Lil' Entrees? They are so easy--my daughter didn't even need them warmed up (from room temp. of course). There are several different ones. Hope this helps!!!

I agree with Tracy O on this one. When I had my first outing alone I too was concerned with meals, etc. My husband was somwhat insulted because it came across as though I did not trust him to take care of her. I never thought about it that way.

They now have daddy daughter time when I am away and they have a fantastic relationship. She is now 13 and treaures special time with dad.

Let daddy and son have some bonding time!

i have found that most everything is freezable, what i do is make extra when i am preparing our regular dinner meals, & then take the leftover & put it into the freezer. (if i freeze in plastic i always defrost completely in the fridge, & then take out & rewarm in glass, bc of the health issues)
meatloaf is very easy to freeze (you dont even have to cook it first if you dont want) & easy to hide pureed veggies in.
also spaghetti is an easy meal (that your hubby could fix) & i usually hide some pureed zuchinni in the sauce (you could make a puree ahead of time & then your hubby could just add it if you wanted)
lasagna freezes well too.

Hey T.,

I would suggest something like spaghetti- you can stick it in the freezer in a microwaveable bowl and then dad just has to stick it in the microwave as stated in a marker written on top of lid of bowl. Perhaps some chicken with rice and carrots, it can alos be frozen the same way- or kept in fridge for three days tops before cooking it!! My little guy, who is five now, loved this!!
