My kids eat lots and lots of beans their fav is refried black beans. I cooked them from dry, in the crock pot, adding onions, garlic, cumin, cilantro, salt, pepper, and sometimes other spices, a little vegetable juice/tomatoes or other veggies. Lately (after reading worlds healthiest foods - www.whfoods.com - check it out for great recipes) Anyway I puree it in the bender with olive oil and adobe seasoning with cumin, the boys love it with rice and tortillas. They love quinoa, lentils, and other beans. You should check out that book -- it is awesome! It is also awesome that you homeschool your kids, I am just beginning to!
