Seeking Ideas for Low Carb Foods

In an effort to lose weight my husband I are start to eat healthier, specifically eat less carbs. I am seeking good food ideas that are healthy and low carb. Any ideas would be greatly appreciated.

Here is one of my favorites. I usually make it for breakfast, but have occasionally made it for other times as well.

4 ingredients: sweet potatoes, onions, bacon, olive oil.

Cut up 2 or 3 sweet potatoes into half-moon slices and saute them in a little olive oil for a few minutes with chopped onion (I use about 1/2 an onion, but it depends on preference). When the sweet potatoes are beginning to get soft, add bacon cut up into smallish pieces. Stir and cook until bacon is cooked through and sweet potatoes are soft. DELICIOUS and SO good for you!

I have also used left over meat from the night before. Works with beef and chicken especially well. Try it even if you aren't much of a sweet potato person. I've actually converted a couple people who said they didn't like sweet potatoes much because this is not a "sweet" sweet potato recipe.

Also try to substitute sweet potatoes in a soup recipe that calls for white potatoes. You won't believe how it pumps up the flavor!

The key to losing weight and keeping it off is to eat the right types of food. Have you ever heard of the Glycemic Index? I have been into this since its inception. The authors that I follow are Dr. Jennie Brand-Miller and Kaye Foster-Powell. They are from Australia. The New Glucose Revolution Low GI Eating Made Easy is a great book. Try lowcarbdiets.about.com you wil find a whole wealth of information there on low carbs. They have lists of foods that are low carb and which ones to avoid.

my husband and i started the south beach diet last year because i was pretty bummed about putting on weight after my son was born. together we lost 90 lbs (me-40 him-50). i found this website after i had read the book. http://www.southbeach-diet-plan.com/food_list.html
it will give you 2 lists one of the foods you can eat and one list of foods you shouldn;t eat. when we first started we couldn't believe that we were even on a diet.

after a while though, i got bored with it and i hate restricting myself so i switched it up and started to calculate my points (weight watchers) BUT i did that while still trying to stick to the "good food" list. this way if i did mess up and have a food on the avoid list, i could just limit my points and not feel guilty. I lost 10 lbs in 2 weeks doing that and i was RARELY hungry.

the most important part was that we really started feeling healthier. i worry about diabetes since i runs in both of our families, we just wanted to start doing things better not only for ourselves but for our children too.

for bfast I eat gianelli mild turkey sausage fm wegmans with veggies. I precook the sausage then reheat with evoo and raw veggies. yummo!

I would definantly stay away from white breads,white rice and regular pasta. try to eat wheat bread,brown rice. eat lots of salads,proteins such as fish,chicken and turkey. watch the sugars also they turn into fat even if something says it is fat free. If you really want to lose weight i would do weight watchers they teach you how to eat better by doing portion control.

Things that we have munched on have been lunch meat ends (sometimes grocery stores sell these and we cut them up into little squares) we also like the cheese sticks - they have lots of different kinds of cheese in bite size squares also. pepperoni, I found a yogurt from Dannon that is diabetic friendly - has only 3 carbs and is very good. Strawberries and whipped cream is a great low carb snack. Popcorn is higher, but alot lower than other snacks. Sunflower seeds and some other nuts. As for dinner, I would just cut out that one side dish (or have a smaller portion) - and eat just the meat and vegetable. This has worked well for us.

Look into diabetic resources--I've been able to control my diabetes (in part--still on prescription) by cutting my carbohydrates.

Stick to lean meats and non-starchy vegetables. Make as many of your carbohydrates as possible whole grains--switch to whole wheat breads and pastas, for example.

Buy a book on the Glycemic Index (GI). The foods that are low GI are low carb. Eliminate white foods ie white rice, white flour, white potatoes. Replace with brown rice and other whole grains like quinoa, barley, millet. Whole grains break down slower and put less glucose in your blood that needs to be stored in fat if you don't use it immediately. Increase your fiber intake. Berries are low GI. Watermelon and grapes have a high GI content. Green vegetables are great. Hummus with celery or carrots is a good snack as well as a handful of walnuts(high in omega 3 fatty acids), low fat cheese or plain low fat yogurt(add your own berries). If you get a craving for chocolate go for Lindt 85% cocoa dark chocolate only 8 carbs and sugars in 4 squares of chocolate.
