Ask your mom what she feeds him, and stay close to his usual diet.
I can't imagine how much you have been missing him! At about 14 months of age, he is probably eating the same types of things that you and your husband eat. He will most likely eat a lot of snacks throughout the day, my 19 month old son like cheese, banannas, eggs, strawberries, apples, deli meat, baked potatoes...
We eat a lot of baked chicken, pasta, stir fryed vegitables in butter and garlic and seasonings. Or, we grill steak or chicken on our George Foreman grill alongside some mushrooms, green bell pepper and onions, and make fajitas.
Get some boneless ribs and simmer them over medium heat on the stove with some bbq sauce. In the meantime, make some rice and veggies on the side.
Also, chicken or shrimp tossed into some cheese tortallini, add a can of green beans and some chopped walnuts and red peppers, garlic, salt and pepper with heavy whipping cream as the sauce all heated through together is amazing!!
Instead of chopping fresh veggies all the time to throw into dishes, I buy them frozen and ready to cook, it's so much faster and easier.
Also, www.allrecipes.com or www.kraftfoods.com has some good recipes.
Get a little slow cooker book/casserole book that is small and usually at the check out stand at the grocery store. Those issues usually have great, easy, quick and healthy recipes.
Also, I make tuna salad in a big bowl and we snack on it between meals for a couple of days. We just put it on rolls for simple sandwiches.
2 large cans albacore tuna packed in water
1 small can chopped black olives
4 chopped celery stalks
3 large chopped sweet pickles
about 2 cups Real Mayonaise
1 tb lemon juice
salt and pepper
Just mix it all up... my son loves it on sandwiches.
