RV Campping Oven Recipes. Need Ideas!

We are going camping for 9 day in a few weeks. In the past we've cooked mostly on the fire coals. This year however fires are banned. That means no dutch oven too! We do however had a older trailer we camp in that has a oven that fits 8x8 casserol dishes. Now I've got to come up with some great recipes. I'd like to hav ethem made up before we head up campling and freeze them so them keep well.

Have any recipes that are:
8 x 8 casserole size
Can be frozen prior to cooking
And are Kid friendly?

So What Happened?

These are great ideas. I think I'll hit the frozen food isle and check out some pre-made casseroles. I was thinking that if I had everything frozen prior to camping they would stay much better in my cooler. Thanks for the idea.

Enchaladas? Baked potatoes? I like to cook these at home and have them ready when we go. Quiche?

Do you have enough freezer space in the camper to hold this food frozen for that long? This is a concern also.

Oh, and the Betty Crocker meal bakes in a box are great for this. It come with everything in the box so you just dump, mix, and bake. I know its not very nutritious, but you are camping, so...live it up a little. Right?

1lb of ground beef cooked
1 can tomato soup
1/2 of soup can of water
optional:minced garlic and chopped onion
cooked noodles (shells work well)
garlic salt, pepper
combine all ingrediants into casserole dish and cook at 350 for 30 min
can top with shredded cheese
super delish and easy peasy (kid approved my daughter likes it and shes picky)
I saw someone say potatoes, these are a great idea but you can't freeze them.

Does your camper have a stove top also? If so some easy meals are to boil hotdogs. Make sloppy joe meat ahead of time and just reheat in a pan.
If you are only going to be able to use the oven, we have done the frozen lasagna it does take a long time to cook though. Sunshine potatoes, slice hotdogs put mashed potatoes on top (pre make or use instant) and cheese, bake until heated, add mustard if you want.
any casserole that you bake at home could be baked in a trailer.
Shepherds pie or chicken pot pie made with bisquick would be easy.

Sorry- I suggested a dutch oven in your other post... kindly disregard that suggestion. :)

I agree with the other posts (see, I read first this time!) that enchiladas freeze well. You may want to look in the frozen foods section at the grocery store. They have Stouffers-type meals that may work.

Enchilada's are GREAT for camping. My parents use that in their RV all the time. However, I will warn you - that cooking in the summer in an RV is HOT. So my mom doesn't use her oven that often in their motorhome in the summer.

Keep in mind as well that the freezer you have won't fit nine nights of food in it.

the ground beef for burritos and tacos.
stuffed bell peppers
spaghetti sauce (I just hung up the phone with her) and this is one of her "go-to's"

Other than that? She sticks to the stove top and grill - she likes to keep it simple. They have a grill attaches to the RVs gas so my dad grills A LOT on it!!!
