What about salads? Have the veggies in small bowls, he can make up the salad and bring it and a bottle of dressing for you to pour, or can bring everything on a tray for your to fix.
You could also have sandwich ingredients for him to gather and bring you, the bread, meats and cheese, lettuce, tomato, condiments...a salad and sandwich, some bottled water and you have lunch.
For breakfast we put some yogurt in a bowl, top with cereal and cut-up fruit. that would be easy even for him to fix.
For snacks have individual containers of yogurt, applesauce, mixed fruits, cut up veggies, hummus and/or dip, string cheese, whole wheat crackers, he can bring you some, too!
