Recipes That Kids like (Mom and Dad Too)

I am looking for some recipes that kids like. My kids aren't that picky but as a busy mom who works full-time and has a long commute, I am looking for some new but easy (ingredient friendly) recipes ideas for the family. I feel like half the battle is figuring out what to cook nightly. Looking for some ideas that aren't mac/cheese, grilled cheese or chicken nuggets but something the entire family will love and give a A to.

One of my kids and family's favorite is BBQ pulled pork sandwiches. I get a huge pork loin when it is on sale and cut it in thirds. Then defrost a section and put it in the crockpot with water or broth. Cook all day and then when you get home just shred the meat and BBQ sauce, homemade or jar, put back in the crock to warm through. It is foolproof and everyone loves it. Add some coleslaw ( I buy the bag, add mayo, vinegar, sugar and salt and pepper) some fruit or veggies and it's a meal.

take chicken breasts and cut into strips. dip in egg white, then Progresso Italian bread crumbs and put in baking dish. Pour Italian Good seasons dressing over it. Bake at 350 for one hour. Voila! Leave uncovered while baking for crispier...... the kids might think they are chicken fingers!

Wow--do I have a simple, no-effort recipe for you!

They're called Mexican Stuffed Pepper Biscuit Tostadas.

(I made them last week and my husband AND 9 year old acted like I was some kind of Food Guru or something. Little do they realize it was about $5 and took about 30 min start to finish!)

Here's the recipe:

My no-fail 30' dinner (even for guests!):

Chicken scaloppine with Marsala (super italian!): get the chicken cutlets, roll them in flour and press lightly, shake off extra flour, lay in a hot (not sizzling) skillet with either extra virgin olive oil or butter. Brown both sides and salt. When the juices are reduced, dump a glass of sweet Marsala wine (the unsalted kind, find it at the liquor store), it 'll sizzle and will coat the cutlets with a yummy glaze. Enjoy!

Green beens and potatoes: boil (or steam) both, chop, put in bowl and dress with just salt, extra virgin olive oil and a little lemon juice. Gustoso!

For dessert, chopped strawberries mixed with lemon juice, sugar and sprinkle with choc chips...BUON APPETITO!

Taco Soup:
Ground meat (we use turkey)
1 can of beans (usually black)
1 can of corn
1 can of diced tomatoes
a packet of taco seasoning
onion
4 cups chicken, beef or vegetable stock

Brown the meat with the onion then add everything else and simmer for about 20 minutes. Serve with tortilla chips.

I've added peppers to it and it's tasted good. You can pretty much add whatever vegetable you want.

They also love spaghetti, tacos (assemble yourself). Any type of noodles with boneless skinless chicken cut up and put in and a vegetable added. Hot dogs wrapped in crescent rolls and baked. Grilled hamburgers, pizza, stir fry.

i recently found a recipe for chicken casserole .. my fiance would have me make it twice a week if i could and my dad who hates chicken even loves it.. its so easy.. the recipe says it feeds 6 but it depends on how much u eat lol .. roughly 3lbs of cooked cut chicken (bit size or a little larger) layer it in the bottom of a casserole dish.. 16oz cooked broccoli (i buy the bag of broccoli cuts so the pieces are a little smaller its easier to eat that way) layered on top of the chicken.. then in a bowl u mix a can of cream of chicken soup, 1cup of milk and 1tablespoon of lemonjuice mix it all up and then u pour it on top of the chicken/broccoli.. on top of that u layer 2 cups of shredded chedder cheese.. in a bowl u melt 1&1/2 sticks of butter and mix in 2 cups of cornbread stuffing mix.. layer stuffing on top and then u put it ina 350degree oven for 30 minutes... its amazing and really easy to make

Bean burritos. Mostly just beans and cheese, and I put a little guacamole in as well. And I serve it with red (or orange or yellow) pepper strips.

Pesto pasta. Add toasted pine nuts for protein (and yumminess). Side of peas. (This is the favorite dinner.)

Stir-fry veggies and tofu. Sometimes with rice, but more popular with yakisoba noodles.

Pizza - make your own on the grill to control cheese amounts and add veggies (my girls only eat mushroom pizza). You can even use pita bread for a crust if you want. Apparently, Trader Joe's also has awesome pizza dough.

Stuffed cabbage is huge in this house and it's relatively simple to do and doesn't take more than an hour to bake. We also love egg salad inside pitas. We do lots of meat-free options so stuff like tostadas made with only rice & beans is actually a very satisfying and tasty meal on it's own. Pasta salads are always an easy go to and you can mix it up to your family's taste with ease.
