Recipes Needed for Son's Bday Cookout

Hey ladies!
I am having a party for about 40-60 people for my son's 2nd birthday. We are grilling ribs, k-bobs (chx and steak), wings, mini hambergers and hotdogs. We will a big pot of mashed potatoes, salads, chips and dips.

What else do i need? Is this enough?? i feel like i need something else or something more "formal"..? Any ideas!?!?!

Maybe something light, like a jello/whipped cream salad or ambrosia. Something to take the heat off.

What I love is fruit kabobs-cut up a variety of fruit and put on skewer. Then put skewers into a whole pineapple. It makes a beautiful arrangement on the table and is edible too!

That sounds great. I would add some fruit. I had lots of fruit at mine and the adults and kids ate it up.

Your list sounds great already! I just threw a BBQ last night and got great reviews on the baked beans and jalepeno poppers, which were SO easy to make and something a little "extra" without much extra work! Simple cut jalepenos in half lengthwise, remove the seams and seeds, spoon in cream cheese, cover with a thin slice of bacon (cut to fit the size of the pepper) then grill 20-25 mins on low. We cooked these before we started the rest of the meat and they were a huge hit! Because not everyone can eat things that hot, you wouldn't need to make enough for everyone, just enough for the daring! We got the jalepenos at Market Street in Allen off 75 & Bethany and they were huge, which made it really easy to do!! I made them before, covered them with plastic wrap, then just pulled them out of the fridge when they were ready to grill. Easy!! Have fun!!

Thats a party i would mind going too.lol I think you made a great list and as it is it will be stressful you dont want to spend all your time cooking. you will have a great party.

Hi! I went to an outdoor party that had a cute idea! Cut veggies in long strips(carrots, celery, cucumber, squash, etc...)then just stick them in plastic cups with ranch dressing already in the bottom! Everyone can just grab a cup then throw it away... And best of all, no kids double dipping! YUCK!LOL! Now if you need someone to come by and sample your menu, just let me know... For quality control reasons of course! LOL!

Hi S.,
You can also make poatoe salad ,mac and cheese ranch style beans,veg plate ,devil eggs,roast corns on the grill I hope all this helps I tried to think of all the easy things because I am sure you will have your hands full on that day these are some of the things we make on cook outs etc .Good Luck

One of my favorite things to make for a party is a Ham Roll. It is very easy to make, and is always a big hit, with adults anyway. The kids usually just eat the crackers so I always have extra. One time I made this for a more formal event by spreading the cheese mixture and ham on large tortillas, the ones made with spinach and sun dried tomatoes for color. Then I rolled them up and sliced them to make pinwheels. They were very nice but a lot more work. Don't use the low fat varieties of cheese. I just doesn't come out right.

Ham Roll

1 pound shaved or very thinly sliced ham (from the Deli counter)
2 packages cream cheese
1 small tub small curd cottage cheese
1 envelope dry italian salad dressing mix
1 box Ritz crackers

Mix cream cheese, cottage cheese, and salad dressing mix in stand mixer or with hand mixer. Spread evenly on cookie sheet lined with parchment paper or waxed paper. Layer ham evenly over top. Chill in fridge for a few hours or overnight. Roll jelly roll fashion by pulling paper from one end to the other. Cheese mixture may stick a little, just use a spatula to gently scrape off paper and help create roll. You can sprinkle parsley and/or paprika on the top for decoration. Arrange on platter with Ritz crackers and knives for spreading.

Ummmm, making be hungry!
Sounds like way to much food, which is the only way to do it!!
I would add bowls of cantelope cut into bite sized pieces, a bowl of sweet strawberries, fresh pinapple and grapes. Sometimes I just heap them all in a huge bowl together.

Another special summer treat in our family--can't have a party without it--is homemade ice cream. Would require several freezers to feed that crowd and you might want to draft some family members to each make their favorite flavor. Have fun!
