It's such a tough age--I've got my third girl there now. One of my favorite sneaks is in taquitos. In the food processor I'll toss carrots, zucchini, onion, whatever I have, until they're finely chopped. Mix that in a bowl of cooked shredded chicken or beef and add salt and pepper to taste. Nuke the corn tortillas for a minute. Warm oil in a skillet (1/8" of oil--you won't use it all.) Put a dollop of mix into the tortilla and roll. Place in the skillet and cook turning until golden all the way around. Top with grated cheese and I like to leave a bit of sour cream around so they can practice "dipping." My other favorite guilt-free snack/sneak is smoothies. Frozen berries and fruit, yogurt, whole milk or water, a little honey. I sometimes add cooked carrots, sweet potatoes, or whatever I think I can get away with. And finally, I know this is weird, but I drink Low-Sodium V8 daily, and my 1 year old thinks it's juice and will drink sips of it. So just saying, sometime we try too hard to sneak, when truth is, if the are exposed to healthy food as the norm sooner or later it'll end up in their tummies. Case in point--my older girls think cucumbers are to world's best snack. Not because I got it in their milk shake, but because when they were hungry, healthy options were the only options.
