it easily subs for other meats in any tomato or cheese-based dish. I use it in soups, cajun rice dishes, & even grilled.
I have a whole family size package of Eckrich sausage left over. Anyone have any ideas on what to prepare with this. I would hate to trash it.

My MIL makes something REALLY tastey with hers. She chunks potatoes (peeled), adds sourkrout (sp) and chunks the sausage in a pressure cooker. Honestly, that is IT!!!! I love to add mustard and pepper to mine and MMMMMMM it is soooooo sooo good.
Red beans and rice is always good, slicing the sausage up in with it!
Freeze some.

Slice it up and cook in a skillet with onions. One of my favorite dishes! I serve it with 'american fries' (like diced hash browns) that I cook in a skillet til they're crispy. It's also one of my kids' favorite meals.
According to my hubby the only way to make smoked sausage is to cook it up with onions and bellpeppers (maybe a little bbq sauce thrown in at the end) with mashed potatoes on the side.

Go to www.crockingirls.com. Watch the video for this week. They used Eckrich sausage. I think the recipe is called Mandy's Mess. It looks and sounds yummy.
Freeze it. Make a pasta with either spagetti sauce or Ragu Parmesean alfredo sauce.
Slice it up toss in a suttee pan with some sliced onion add a little worcester sauce and cook for about 10 mins. Serve with a salad and some vegetables.
First of all, you can freeze it. If it's the skinless, it cuts very easily straight out of the freezer and you can put it straight in a pan when cooking. I buy a few lbs of Eckerich once a month. We use it for:
- hashbrowns. Sautee potato (fresh or frozen) with jalepeno, maybe some onion, oil, salt, bell pepper, and sausage. I prefer to add a scrambled egg and cheese. Husband likes his in a tortilla with salsa.
- "SausageRice and Beans" meal. In a skillet, I sautee jalepeno, onion, and sausage. Add two cans of black beans. Heat. Top over cooked rice
- all by itself meal - dice it up, heat it, eat with fun toothpicks
- jambalaya! (I always ruin my recipe. But you can find one online I'm sure)
- Sausage Stirfry - sautee sausage, bell pepper chunks, onion, and snow peas (fresh is best). Put on top of a good noodle. We cook Ramen per pkg instructions then sautee the ramen in a pan with sesame oil and butter. Oh so tasty!
- any recipe that calls for ham, I may use sausage. PM me if you want the recipe for my Breakfast Muffins (cheese, egg, Bisquick, sausage), "German Soup" (cabbage, carrot, tomato juice, broth, sausage)
Grill it and cut it to bun length and serve like a hot dog, Serve with eggs for breakfast. I love to just cut it into pieces and brown it and make fried potatoes to go with it. That's just off the top of my head but I'm betting Eckrich has recipes on their website.
A skillet dinner--
a little bit of oil in an electric or non stick skillet, diced potatoes and onions, then the diced or sliced sausage and then shredded cabbage or coleslaw mix...
in a skillet.... red potatoes, onions, and sausage. one of our favs!
