Recipe for One Yr. Old Birthday Who May Have Milk Allergy

Hi everyone. My daughter was diagnosed with milk protein allergy since 3 weeks old. She is going to be one next week and I wanted to make her her own birthday cake...but I have to stay away from cow's milk products. Does anyone have an allergy friendly cake recipe that I could use?

Hi Everyone! Thanks for all of the insight! I used one of the recipes that was given to me and the cake came out great. it didnt taste too bad either! Anyway, with all of the chaos and excitement from the party, my daughter had no interest in cake! We had a great day. Thanks for all of your help!---p.s. I checked out Cool Whip but it did have caseinate in it which is a component of milk so I decided to stay away from it.

here the recipe for vanilla and chocolate cake. i got those recipe from a friend of mine whose daughter that are allergic to dairy :o)
enjoy the recipe.. those are goood. oh that cake is also vegan :o)

*vanilla cake*
1-1/2 cups whole wheat flour (or white)
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. salt
3/4 cup soymilk
2 tsp. vanilla extract
egg replacer equivalent to 1 egg, beaten

preheat oven to 350°f. grease a cake pan. in large bowl, mix together flour, sugar, baking powder, and salt. combine the remaining ingredients, and add to flour mixture. beat for 2 minutes. bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.

*chocolate cake*
1 cup sugar
1 1/2 cups flour
1 tsp. baking soda
1/3 cup cocoa
1-2 cups chocolate chips (to make it moist)
1/2 cup oil
1 cup cold water
2 tsp. vanilla extract
1/2 tsp. salt
2 tbs. vinegar

mix first nine ingredients well (all but vinegar). add the 2 tbs. vinegar and mix quickly until mixed well. bake for 25 minutes at 375°f.

*chocolate frosting*
1/4 cup dairy-free softened butter stick
1 teaspoon vanilla extract
4 tablespoon soy milk or rice milk
1/3 cup cocoa powder
2 cups powdered sugar
beat butter first in high speed until fluffy, then add cocoa&vanilla on low speed. add sugar& milk last. chill for 30 minutes

*white frosting*
2 tablespoons dairy-free softened butter stick
2 cups + 2 tablespoons powdered sugar
2 tablespoons soy milk or rice milk
1/2 teaspoon vanilla extract

mix everything with a fork. add a little more milk if needed and chill for 30 minutes before applying to the cake.

Hi K.,

My son (now 11) had a milk allergy. For his 1st birthday cake I made a super simple cake for him. It has 2 ingredients!
1) is Nilla wafers whatever flavor and brand you like as long as it is safe for your daughter.
2) Cool whip! Which is non dairy if you can believe that (at least it was 10 years ago.)

The "cake" is great because you can be creative how you "design" it. The idea is to coat and stack or link the cookies together. And let it sit overnight to soak up the moisture in the cool whip. The cookies soften and they become cake like.

For my son, I made a caterpillar cake. It was super cute. I just made a long link of cookies-with cool whip between and on top of the cookies. Then decorated it to make it look like a caterpillar. He and my guests loved it.

One more tip to anyone who tries this--when you cut it make sure you cut it diagonally so that you are cut many layers of cookies together it looks great and cuts better.

Hi K.. My daughter was also diagnosed with milk protein allergy at 5 weeks old, and we'll be celebrating her birthday next week as well! For frosting, I use the recipe on the side of the confectioner's sugar box and substitute with Earth Balance butter and either plain rice or soy milk. The consistency of the frosting is always a little off, so add the milk gradually and don't over mix or it will become glue-y. The only recipe I have for cake is for chocolate cake and I've found it makes better cupcakes - the cake tends to be tough and chewy. Otherwise, Duncan Hines cake mixes are dairy-free and make a larger cake.
Here is my recipe:

1 ½ C flour
1 C sugar
3 Tbsp cocoa powder
1 tsp baking soda
½ tsp salt

1 C water
6 Tbsp oil
1 Tbsp vinegar
1 tsp vanilla

1. Combine all dry ingredients in a bowl and set aside.

2. Combine all wet ingredients and quickly stir into dry ingredients. Do not over mix.

3. Pour batter immediately into a greased 8x8 pan or muffin pan lined with paper cups.

4. Bake at 350 for 35-40 minutes (cake) or 20 minutes (cupcakes).

I'd love to hear from you how you are managing your daughter's allergy. We've been told that our daughter will likely outgrow her allergy by the time she is two, and to try exposing her to dairy every six months or so to see if she reacts. She was still reacting at the start of this year, but I'm curious to know how others are moving forward with this issue.
