here the recipe for vanilla and chocolate cake. i got those recipe from a friend of mine whose daughter that are allergic to dairy :o)
enjoy the recipe.. those are goood. oh that cake is also vegan :o)
*vanilla cake*
1-1/2 cups whole wheat flour (or white)
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. salt
3/4 cup soymilk
2 tsp. vanilla extract
egg replacer equivalent to 1 egg, beaten
preheat oven to 350°f. grease a cake pan. in large bowl, mix together flour, sugar, baking powder, and salt. combine the remaining ingredients, and add to flour mixture. beat for 2 minutes. bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.
*chocolate cake*
1 cup sugar
1 1/2 cups flour
1 tsp. baking soda
1/3 cup cocoa
1-2 cups chocolate chips (to make it moist)
1/2 cup oil
1 cup cold water
2 tsp. vanilla extract
1/2 tsp. salt
2 tbs. vinegar
mix first nine ingredients well (all but vinegar). add the 2 tbs. vinegar and mix quickly until mixed well. bake for 25 minutes at 375°f.
*chocolate frosting*
1/4 cup dairy-free softened butter stick
1 teaspoon vanilla extract
4 tablespoon soy milk or rice milk
1/3 cup cocoa powder
2 cups powdered sugar
beat butter first in high speed until fluffy, then add cocoa&vanilla on low speed. add sugar& milk last. chill for 30 minutes
*white frosting*
2 tablespoons dairy-free softened butter stick
2 cups + 2 tablespoons powdered sugar
2 tablespoons soy milk or rice milk
1/2 teaspoon vanilla extract
mix everything with a fork. add a little more milk if needed and chill for 30 minutes before applying to the cake.
