You could make mini-pumkin cupcakes with a little cream cheese whipped topping. Since you are busy I would use the package and follow directions, then with the topping put little sprinkles for the season. This I found is great for little ones because they love to feed themselves and the cupcakes being mini they don't get much all over the place. Don't put to much cream cheese topping because that will get all over, trust me...

I am not sure whether or not you are going to be making it with the children, but when I was teaching, we used to make a brunswick stew, with a quick bread, and applesauce. The stew and applesauce can be made with the crock pot and the children can help with the cutting, mashing, etc.. You can easily make pumpkin bread, zucchini bread, or banana bread to go along with it.
Not sure if you were trying to make the items with the kids or not, but here's some ideas off the top of my head:
1. cornbread muffins
2. ambrosia salad - fruit withwhipped cream
3. banana pudding
4. look on www.familyfun.com they have tons of kid friendly ideas.
