does any one have a good recipe for polenta I made it last night and it's firm what can I do with it now can I freeze it ? Any tips would be great.........Thanks

You can slice it into rounds and bake it. Then top it with something yummy (cheese, mushrooms, tomato sauce...). The options are endless.

And it probably freezes well.

When it's soft, it's a great base for stews, sauces, braises, etc. A big bowl of polenta and braised beef is pretty scrumptious.

Make chicken parm... but substitute the polenta for the chicken. So cut it into slices, lay it on some tomato sauce, sprinkle with cheese, and bake.

If you can slice it, you can fry it. And then top it with some shaved/grated parmesan cheese.

Slice it and fry it, top with butter and syrup. Or.....polenta can actually be used in place of pasta in most italian dishes. I wouldn't go for a more bland sauce(like alfredo) since the polenta is bland.. Go for a more robust tomato based sauce.

Hi! I love it firm, it has so many uses!!! Yes, you can freeze it, I just put yesterday's leftovers in the freezer. I individually wrap it so someone can just grab a piece.
Three parts water to one part corn meal- firm, four to one- not so firm. I think the weather and the corn meal affect the ratio.
Polenta s incredibly versatile. Use broth instead. Add herbs and spices at the end. Add cheese. Add ham bits or bacon. Add them all! Add your own ideas. You can pour over or embed roasted veggies or ground meat (whatever you have) or both and have a complete meal. Make it with water and add some agave or maple syrup at the end then use as your shortbread to top with fruit. They say you can use milk but I've never done it. Sometimes I just like to put in a pan with a little butter and make it all crispy.
I can't think of anything we've ever done to make it bad. Have some fun with it!

I love love love grilled polenta 'flats' (about 1 finger thick...I like triangles best for dipping). Broiler works as well, but smokey charmarks either way are a must.

Served with dips:
- Harissa
- Guac
- Pico de gallo
- Chimichurri

Or sprinkled over with

- Zatar
- Fresh herbs

Or Decadent topped with
- lox & créme fraiche
- caviar
- spicy chocolate w cinnamon
