Some friends brought us a pineapple back from Hawaii, and my daughter is the only one who likes to eat straight pineapple. I was hoping one of you mamas would have a great recipe for a pineapple cake or something so that none of it goes to waste. Thank you!
We ate it until we thought we would burst, then used the rest for pineapple upside down cake. It was super yummy, extremely sweet and juicy.

This is my fave. I use boxed cake mix. I usually use crushed pineapples instead of pineapple slices.
PINEAPPLE UPSIDE DOWN CAKE
2/3 cup butter
3/4 cup brown sugar
Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.
1 can pineapple slices or crushed pineapple (I usually use the pineapple that is a mushed into a million pieces)
Place pineapples in the butter and sugar mixture. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
Pour the batter over the pineapple.
Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.
Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.
Scratch Cake:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk
Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.
You can freeze it too. It wont be the same consistency, but I do this a lot, then put it in plain yogurt for my son or in cottage cheese for him. You'd never know it was not fresh. I crush some up in a blender and freeze it in ice cube trays, then pop them out and put them in a ziploc. I try to get less juice in with the crushed. Then I will also cut into small bites, just like it comes in the can, and freeze it in its own juice in gladware. I use small ones, then I pull one out, defrost in the fridge, and he has it for a snack just plain.

What about shish-ka-bobs on the grill with teriyaki chicken, bell peppers, onions, the pineapple and cherry tomatoes? We've done that, and it is excellent. I'll also second (or third) grilling the pineapple. We've just peeled it, cut it into strips and grilled it with some ham steaks. Yummy! Good luck & enjoy the sweet treat!

Pineapple Upside Down cake. I like to use one deep round pan, but whatever you have is fine. Cut pineapple into 1/4 to 1/2 inch thick rounds and lay on bottom of pan with brown sugar, and butter. Put in a preheated oven to melt the butter and sugar and soften the pineapple. Put a marashcino cherry in the center of each if you have them. Make a yellow or pineapple cake mix according to package directions Substitute the water called for with juice from the pineapple. Pour prepared cake mix over the pineapple. Bake according to directions. Let cool and turn the cake over onto serving plate. Easy, pretty, and very tasty!

grilled pinapple with a little bit of brownsugar brushed on it is really good. cut up pineapple with other fruit ina fruit salad is good. cut it up and put it in a pancake and below is a recipe we love so maybe you can do that
1 box carmel or butterscotch flavored pudding mix
1 package coolwhip mix those 2 together and put in fridge
4 apples peeled and diced
pinapple drained or use fresh
walnuts or pecans chopped (optional)
mix apples, pinapple and add the coolwhip mixture. mix it all up and put in fridge to set. really yummy. and if your on weight watchers you can use the sugar free of both coolwhip and pudding mix and it tastes exactly the same with almost no points to speak of.

oh.. you can also cut up 20 oz and add it to a mixture of cool whip and a small package of vanilla pudding mix. Then, take an angel food cake, slice into 3 layers, and spread the cool whip mixture as filling between layers and frost top and sides with it. Refrigerate. Serve.
It's really good grilled and served with barbeque chicken or in teriyaki stir fry!
