Oh Wow. Just Had Sausage Stuffing for the First Time.

Alright. Are you SICK of talking about food, yet? I figure since Christmas is 'out' before Thanksgiving, I can borrow a touch of tree time to drool about Thanksgiving.

I had never had sausage stuffing before. I think I'm in loooooove.

What DID you eat? How'd everything (food / not food) turn out? Who had the biggest disaster? How was your day(s)?

Ahem, we're cooking thanksgiving pt deux today.

My sister made the BEST orange yam/sweet potatoes I've ever had. I Bogarted the stuffing as per usual.

So What Happened?

Pt 1
Roasted Turkey
Giblet cubed bread stuffing
Brown gravy (Ick)
Cream Gravy (bacon drippings) Green Beans
Breakaway Bread (rolls dipped in butter and baked in a Bundt pan
Cranberries in a can (jelly, with the ring imprint)
Cream cheese Green Jell-o salad (shudder)
Sweet Potato (orange! Yam) w marshmallows
Mashed potatoes (1 w cream, 1 with chicken stock)
Other stuff I don't remember, because I couldn't eat any more!!!

Part Deux is smaller... And almost purely for the purpose of leftovers. Lol.
- brined turkey
- sausage stuffing (zomg)
- cornbread & hardboiled egg stuffing
((YES. Im making 2 kinds of stuffing. I'm a stuffing slitch.))
- cream gravy
- collard greens w bacon
- broccoli raab
- Devilled eggs
- cranberry jelly (can)
- My sister's yams (if I can twist her arm)

We ALWAYS do sausage stuffing! It's my favorite!
As well as the cream cheese - pineapple - cool whip green jello salad. ;)

My new favorite stuffing is ciabatta with pancetta and chestnuts. The saltiness of the pancetta is divine. The recipe I used (from Giada De whatever her name is) also had egg in it, which gave it a wonderfully fluffy texture. It was awesome.

We had a wonderful meal. Pretty much the usual with turkey and our favorite sides.

I know many people who can't live without sausage stuffing, but I have never been a fan of sausage. I only eat homemade sausage when I know exactly what's been put in it. The idea of entrails is just not appetizing for me.

My 17 year old son was up at 6am the morning after Thanksgiving to take his pots crabbing.
Our part deux was delicious crab. My son caught it, cooked it, cleaned it and we picked as we ate.
There are a lot of reasons I don't love where I live, but this time of year, living on the cold coast and having crab just about makes up for it.

This time of year is all about eating. We are so blessed!

I LOVE that too.
I LOVE any stuffing.
My cousin usually make about 3 types of stuffing and 3 types of cranberry dishes. YUMMERS.

What we did is we had traditional fare at a cousin's house. And we also had Shabu Shabu at a real tiny cozy restaurant too. Which the kids loved. They wanted to try something different. They aren't real fond of turkey.
So we had traditional stuff and non-traditional. Which, our family/relatives did not understand... but whatever. We did what we wanted to do... and since everyone is a bit fussy and grumpy lately in my family.
Ugh ugh ugh.

I added some sage sausage to my stuffing for the first time this year, too. Wow. It was yummy!

If you want some beautiful recipes, grab the November Bon Appetit magazine. We made a cornbread dressing with sausage and pecans that came from it that was fabulous, as was their chocolate pecan tart with bourbon creme fraiche. We shared our thanksgiving meal with friends who made a great turkey and a gravy with shallots, red wine and sage that was out of this world. (Once I've gotten the recipe, I may post it.)

We're not even tired of the leftovers yet. :-)

We had:
Dry-brined, roasted turkey
Sausage, cranberry and pecan stuffing
Turkey gravy
Cranberry salad
Corn pudding
Brussels sprouts with bacon and pine nuts
Roasted squash with maple pecan topping
Cranberry jelly (love those ring imprints!)
Rice with ground lamb (a family tradition that goes surprisingly well with the turkey gravy)
Pumpkin pie two way, traditional and my dad's favorite pumpkin chiffon pie

This was all for four adults and two kids. We had way too much food to begin with, but I got the stomach flu the night before, and my hubby spent Thanksgiving in bed with the same, so we were down two adults and have the leftovers to prove it. Luckily it was all really good 'cause its all we'll be eating for the forseeable future.

One of the many reasons I love this site is that I learn new things. Shabu shabu is one of those new things. I looked it up and I am going to find a restaurant that serves it. Yum!

My dad started making sausage stuffing when I was a kid, and although I loved it, I always made mine without it. I tried it once and it never tasted the same so it is Dad's dish to make. I make mine but when sausage stuffing is on the menu, Dad makes it. The problem is, I hate it now...he leaves the onions and celery so large and puts sooooo much onion in it now that I can't even taste the sausage. I am now disappointed when we have it...my crazy sisters still rave about it!

I make it every year. This year was the first year with my in-laws...I brought enough stuffing for 20 (there were 14 attending). When I left...NO leftovers. Waaaah!

This is the recipe I use every year and it is a hit every time. I use Jimmy Dean's sage sausage and DO NOT drain it.
