Once our kids started waking up dry, we knew the night time pull-up was more for US then them. LOL So, I invested in 3 waterproof mattress pads. I would layer the bed with a pad and a fitted sheet, then another pad and fitted sheet. That way, when the accident happens (which they will), you can just go in and peel off that first layer and not have to mess with pulling out new sheets, etc in the middle of the night and getting everyone super awake. I would layer the bed with as many layers as you can squeeze on there. And, I'm not sure why, but our kids (now 3 1/2 & 6) have to potty in the middle of the night....they come all the way across the house to OUR bathroom in our room. LOL Even though they have their own bathroom right in between their bedrooms. So, this actually worked out well when they were really young b/c we would always wake up and walk them back to bed. Maybe you can tell her if she wakes up and has to potty, she can come to your room and you will help her. But, those nights are rare. My kids don't drink after dinner and they always hop on the potty right before bed. There will be accidents, but they won't be as bad or last as long as you would think. ;0) Good luck!!!
